Made some tepache as a cocktail component for today's tequila-focused cocktail class! If you're not familiar with it, Tepache is a traditional fermented beverage using pineapple rinds, piloncillo sugar, cinnamon, cloves and cardamom. It is also delicious - slightly spritzy with a good balance of fruit, spice, and a touch of wild yeast funk.

These bagels are delicious! I used Stella Parks' recipe - you can follow her @bravetart - it is a cracker! I didn't have the barley malt syrup but used a bit of brown sugar in the boil which gave great results. Thank you Stella!

Trying my hand at homemade bagels as well. (The dearth of decent bagels out west is surprising)
