How many times has your mum told you to stop playing with your food 😆kind of taken it to the next level here. I often get asked how long it takes for me to write a menu. To be honest it’s a lifetime of travels, experiences, personalities, family, memories and cultures that influence a dish. Sometimes it comes to me in an instant and other times it can take 5 or more trials to perfect it. I often find myself stopped in my tracks because a thought has come to my mind and I want to entertain it and see how it evolves. It’s impossible for me to track a timeline of developing a menu. It’s creative and empowering. I say go ahead and play with your food 😆 #sorrymum
