My quick meal turned into a really long process when I realized I had to behead, peel, and devein a pound and a half of shrimp in order to make it. 🙄 also, I'm considering starting a book club. Any ideas for a name? Let me know!
Usually I try to use as many vegetables and leftovers as possible mid-week so I'm glad I had zucchini, cooked pasta, black bean meatballs, and spinach in the fridge. So simple. The brussels are just because they were starting to look like they were on their way out. (The book is Guillermo Del Toro's At Home With Monsters btw)
