Happy Thursday friends! Today I went in for my very first job interview and despite being an absolute nervous wreck, I got the job! I'm so excited to finally be making some money and have somewhere to be each day. Being at home is great and all, but I'm ready to leave my comfort zone and embrace the adult life. I'm looking forward to finally being busy and have more responsibilities! Had a blast at the apple orchard yesterday and came back with a huge bag of apples so I'm planning to spend my day in the kitchen baking up some goods πŸ˜‹πŸŽπŸ‘Œ what would you guys make first?! Happy Saturday guys! I'm off to the apple orchard for the day (so excited ☺) so I'll be taking a break from my phone. I'm going to the apple orchard tomorrow and I couldn't be more excited! Have any of you gone yet/plan to go? It's one of my favorite fall activities and always sets me up with a good supply for baking πŸŽπŸπŸ‚excuse me while I go dream about what I'm gonna make first! Happy Thursday! First soup of the season (better late than never) has me feeling all kinds of cozy!! I whipped up this vegan split pea soup from @makingthymeforhealth and the flavor was perfect. So hearty and filling too! Easy peasy chickpea salad for lunch! Normally I like to add more to the salad like red onion or celery but I was in a time crunch and didn't have any pre-chopped. I love this recipe because you can totally customize it to your liking - the base that I used here was avocado but I also like using avocado oil mayo or hummus when I want something different πŸ‘Œ either way its delicious and takes no time at all to make! Made it just in time for #toasttuesday 😜 I was CRAVING eggs and avocado toast for lunch so I whipped some up as soon as I got home. Didn't even try to plate it nicely because I was so hungry πŸ˜‚ it's been rainy all day which always puts me in a napping mood (anyone relate?) but luckily I've been able to power through πŸ™ needless to say I'm SO ready for bed! Happy Monday everyone ❀ It's only been two days since I last posted but it feels like so much longer! I do try to make an effort to post every day but if I don't, you can be sure I'll check in sooner or later 😊 I've been crazy busy lately with job applications, running my cat to the groomer's and helping my mom redo one of our bathrooms, so most of my meals have been anything but pretty. Here's a throwback to my dinner from the other night though! Oats are on the agenda once again, are you surprised? πŸ˜„ I've been playing around with different mix-ins/powders/flavors and thought I'd share these cinnamon maca oats which turned out so delicious. I don't have much else to say for now other than I hope you all have an excellent day! πŸ€— // rolled oats cooked in cinnamon, maca powder, chia seeds, @betterbodyfoods superfood protein and @ripplefoods unsweetened pea milk. Topped with frozen raspberries (that got all melty 🀀) and @traderjoes crunchy chia and flax peanut butter
