Dinner // sauteed spinach + cauliflower rice + chickpeas (tossed in lemon juice, cumin, garlic powder and paprika) + roasted brussel sprouts + half an avocado that I'll add later!

Happy Sunday πŸ€— I let my body do it's thing last night and ended up sleeping an embarassingly long amount of time so my day is starting a little later than expected. It's also a little embarassing how quickly I downed this smoothie but the hanger was real this morning πŸ™ƒ nothing on the agenda for me today, I hope you guys have a nice Sunday!

I CANNOT get enough of butternut squash. Seriously. Not a day goes by where I don't find the opportunity to have some. I think there needs to be some sort of addiction hotline that I can call πŸ˜‚ but for now I'm just gonna embrace the way that I am because there are certainly worse things to be addicted to, right? Happy Thursday friends!! I got up early this morning to get in a nice shoulder workout and was feeling a smoothie afterwards so this was the result 😌❀ today is my day off and I'm super excited because we'll finally be putting up our Christmas tree! πŸŽ„I've always enjoyed pulling out all the different ornaments that we've collected over the years and being reminded of good memories. I swear my mom had still saved some from when I made them at school during kindergarten πŸ˜… I hope you all enjoy your day!

I've typically been having smoothies or overnight oats for breakfast, so I've been craving allll the warm and cozy dishes for lunch. Enter: these curried chickpeas that have become a staple meal for me 😍 I'm curious, do you guys have any staple meals that you tend to gravitate towards for lunch? I could seriously eat this dish every day!! Have a wonderful Wednesday ❀

Lunch // brown rice + sauteed spinach + curried chickpeas (sautΓ© garlic and onion in a pan. once fragrant add tomato paste, chickpeas, curry powder, cumin, a pinch of cinnamon and water and cook until warmed through)

A life lesson from the smaller (slightly) burnt pancake on this plate: it's okay to be different, people may notice but they will still love you regardless πŸ€—πŸ’• I don't know about you guys but I definitely don't discriminate, especially when it comes to pancakes πŸ˜‰πŸ₯ž I went for the classic peanut butter banana combo this morning and I'm sooo happy that I did. β €β €β €β €β €β €β €

Breakfast // @kodiakcakes buttermilk mix, @furtherfood collagen peptides (code: samandherhealth10), egg whites and coconut flour mixed together and cooked on the stovetop in coconut oil. I served my pancakes with banana slices and @pbfit.official powdered peanut butter 🍌πŸ₯œπŸ‘πŸ»

Me: *inhaling all the salad in hopes that my cold will go away* πŸ˜… Lunch today was one of my favorite salad combos that I discovered recently and although it ain't the prettiest, it sure does deliver! I definitely feel those nutrients coursing through my veins πŸ™ŒπŸ» I want nothing more than to cozy up on the couch with a cup of hot chocolate and lots of movies, so I think I'll be doing just that. Happy Wednesday!! I'm still feeling under the weather but thankfully I haven't gotten any worse πŸ™ the only thing is that we have NO tissues at home (really?! the one time I desperately need them?! 😭) so I need to remember to pick some up! Anyways, here's my dinner that I later threw into a tupperware to take to work with me tonight. Soooo excited to dig in πŸ‘… Have a great evening guys πŸŒ™

Well it's official, my streak of going almost two years without getting sick is over 🀧 I woke up today with a headache and clogged sinuses and I kinda just wanted to stop existing right then and there but OF COURSE had to drag myself out of bed and to work πŸ˜… I really hope that whatever I caught doesn't get worse because I've got stuff to do!! 😀 Regardless, I will always put my health first, so I'm making sure to rest when I can and eat plenty of nourishing foods. Gonna get to bed early as well and see if I feel better in the morning. I hope you all had a good Tuesday!

Using up leftovers ain't hard when you've got pasta to throw them into 😜 I've been laaaazy today but it feels nice to rest after being on my feet all week. Just enjoying some good food and being home so I'll feel rejuvenated and ready to get back at it tomorrow 😌 I hope you all had a great weekend!

I'm welcoming the weekend in the best way possible with this jar of chocolate maca overnight oats πŸ˜πŸ’• I wasn't planning to take a two-day break from posting but hey, it happens! I had a wonderful time celebrating all of the Thanksgiving festivities with my family, eating good food and simply "being," and I hope you all did as well πŸ€— it's only going to go uphill from here! (cue: all the christmas music πŸ‘€πŸŽ„πŸŽ…) Today's looking like a nice short shift at work before I head over to my Dad's house for a visit and a verrryyy much needed cookie-making session πŸͺπŸͺ Who else is planning to do some baking?! ❀
