Reminders of spring - Meng Ding Huang Ya (Yellow Buds). A rare yellow tea from Sichuan province, this lot exhibits a nice balance of the wrapping/sweating process that distinguishes a high quality version fit for it's traditional role as a tribute tea. Sweet, light, with a mild vegetal flavor, we are showcasing this tea now in anticipation of the spring harvest that is just around the corner. Coffee science - both of these cortados were made from almond milk, but one separated and slightly curdled while the other didn't. Why? By simply adding a base salt you can prevent the curdling and separation. Espresso is acidic, and milk, almond milk, soy milk, etc all react negatively to that acid if it reaches 4.7 pH or lower. Simply adding some dipotassium phosphate or potassium citrate will make the milk act like a buffer solution, returning the pH of the drink above 4.7 pH. Pretty cool and easy science, but why do companies charge so much more for their "barista blends" when this is all that is happening?? #coffeescience #specialtycoffee #acidandbase #espresso #secrets #cafelife

The difference of a few days... Sampled 4 lots of the same Darjeeling autumn tea, each picked and processed on different days across the span of about two weeks all from the same plot. The change in aroma, body, and flavor between each lot is remarkable. All are given the grade of SFTGFOP, but one lot outshined the others in terms of balance, complexity, and clarity.
