What I’ve got here: baked chicken with @heatandflavor hot sauce + my homemade green salsa (on the blog), roasted veggies and romaine lettuce, added some @olivealchemycalabasas olive oil green pepper.. SO THIS WAS SPICY!

Father’s Day may be over but there’s always a reason to have CAKE✌🏼(Probably not the sugary packed kind of cakes though😳)

I made this CHOCOLATE PALEO CAKE WITH PILI NUT COCONUT FROSTING.

Paleo, Gluten free and Dairy Free. Recipe of the cake was adapted from @downshiftology and frosting all my idea😜
.
Chocolate Paleo Cake with Pili Nut Frosting
.
INGREDIENTS
- 3 cups of almond flour @bobsredmill
- 1 cup of cassava flour @ottos_cassava_flour
- 1/4 cup of coconut flour @arrowheadmills
- 2 tsp of baking soda
- 1 tsp of coffee in powder
- 3/4 cup of dark cacao
- 1 tsp of himalayan salt
- 1 cup of monk fruit @lakantosweetener
- a dash of cinnamon and clove

Wet ingredients
- 1 1/2 cup of full fat coconut milk
- 4 eggs
- 1 cup of water
- 1/2 cup of coconut oil @nutiva
- 1 Tbsp of able cider vinegar
- 1 tsp of vanilla extract
- 1 tsp of almond extract
.
FROSTING
- 3 cups of pili nuts @eatpilinuts “PURELYHL” for discount
- 1 cup of shredded coconut
- 2 Tbsp of raw honey
.
METHOD
.
Preheat the oven at 350F. Mix all the dry ingredients in a bowl. Add all the wet ingredients and mix until you get a nice mixture. In a greased cake pan add the mix and bake for 40 minutes.
Meanwhile in a food processor add the pili nuts and process until you get a buttery consistency, add the honey and coconut shreds.
Take the cake out of the oven, let cool and add the frosting on top. ENJOY!

On of my AVOCADO CREAMY PIES (recipe on the blog too!) with some sprinkle of delicious and mystical chocolate chips from @knowfoods 😜

INGREDIENTS
(Makes 12 mini muffins)
.
Crust
- 3/4 cup of coconut flour @arrowheadmills
- 3 Tbsp of monk fruit @lakantosweetener
- 3 Tb of coconut oil @nutiva
- 1/2 cup of water
.
Filling
- 2  peeled avocados (270g)
- 1 cup of almond or coconut milk
- 1/4 cup of creamy almond butter
- 1/2 cup of monk fruit @lakantosweetener - 1/4 tsp cinnamon
.
METHOD
1. Preheat the oven at 350F. In a bowl mix all the crust ingredients, be sure that the coconut oil is melted. You can use your hands, personally that way is easier.
2. In a muffin baking tray add BPA free silicone muffin molds or paper molds and add a little base of the crust mix in each muffin hole.
3. Bake for 12 minutes. Then let cool down.
4. For the filling you'll use the blender or food processor (I used the food processor). Add all the ingredients and blend until you get a creamy mix. Pour in the muffin tray evenly and freeze for 3 hours.
5. ENJOY!
