I haven’t been as active here recently because I’ve been a little busy cuddling with this cutie pie ❤️ We’re settling in to our new routine & enjoying lots of family time.

This beautiful journey of pregnancy is coming to an end and marking the beginning of a lifelong journey called motherhood 💕 We can’t wait to meet our little one!

Let’s talk about FATS —
A lot of people FREAK OUT about consuming foods high in fat, but it’s important to recognize the differences in healthy fats (unsaturated fats) and UNhealthy fats (saturated fats). -
Unsaturated fats (good for you) help to actually LOWER cholesterol and triglyceride levels! This is the opposite of what most people think fats do. Did you know most sources of healthy fats are found in plant based foods? Yup, things like avocados and nuts.

Saturated fats on the other hand, RAISE cholesterol, CLOG arteries and increase risk for HEART DISEASE. These fats are mostly found in animal products like meat, poultry, high fat dairy, eggs.

The right kinds of fat are critical to healthy diet, providing nutrients and vitamins for optimal brain function, heart health and more! So treat yourself to some guilt-free avocado toast.👅

This week’s meal prep included my spin on @ohsheglows favorite chili recipe. I served it over baked sweet potato fries and topped it with 🥑 (duh).

By this time of year, most of our 2018 health goals start to lose steam but I want to encourage you to KEEP GOING. Keep making choices for your life that bring you joy and wellbeing. If you’re trying to “get healthy” in a way that you find yourself constantly complaining about then it’s time to try a different strategy. Create a routine of healthy habits that you actually find enjoyable.

I needed some motivation to get moving today! Ever happen to you?
I reminded myself of all the reasons I WANT to stay active and eat healthy. I thought about how great I feel when I stick to my routine.

How do you get yourself up and at it when you’re missing motivation?

Cooking doesn’t have to be complicated or fancy! Just roast up some sweet potatoe and chickpeas (in the same baking sheet!) and build yourself a filling, nutritious salad within 30minutes... AND have left overs for the next few days too! .

Salad Tip: use hummus instead of salad dressing. It has way more nutritional value, including healthy fats.

TRY THIS: [Southwestern cauliflower rice ] —recipe now on the blog— I’ve been testing out this recipe lately and I love it so much I think it’s going to be part of my regular weekly meal rotation.
It’s got fiber, veggies & plant protein
It’s easy to make (only one pan needed!) and can be transformed into 2️⃣ different meals. 👉🏼 I enjoy it over spinach as a sort of burrito bowl salad, but it’s damn good with corn tortillas for taco night.
It’s too bad I didn’t have any avocados on hand to top it off 😩
