I never had a fear of eating out alone - in fact, it's probably one of my favourite 'self-care' activities πŸ₯° Thank you to everyone who sent in recommendations for lunch spots in Edinburgh - due to time restrictions, I ended up going to @holycowedinburgh, which is very conveniently situated 30 seconds (not an exaggeration!) away from the bus station πŸšŒπŸ“I love Korean food, so this bibimbap salad was a no-brainer! Can't wait to come back to try out some cakes there - they looked amazing, but the slices are so huge, they look like they're meant to be shared 😊 Annnd that's another place off my vegan culinary bucket list! Probably not the greatest picture out there, but I'm very fond of it. This salad's photoshoot ended with tears of joy streaming down my face and intense (yet welcome) abdominal pain - I was laughing so hard that I had to sit down. I love you, Faye! πŸ’˜ Our flat shenanigans will be greatly missed. As for the recipe: it's allll the veg! I really craved some greens the other day, probably since my diet had deteriorated during exam season 🀐 Simply throw together...
- salad mix (2 types of greens and shredded beetroot - I never typically buy them, but what a great way of getting a variety of different plants, instead of just one!)
- radish
- carrot
- red bell pepper
- millet (but quinoa/pearl barley/rice will do as well)
- tofu
- sweetcorn (will I ever get enough of sweetcorn? don't think so!)
- and white truffle oil drizzle for some extra flavour
- sunflower seeds or chopped nuts would be great for some crunch 😚

Super quick and yummy lunch idea! A collab between myself and my lovely friend Nicole 🌸 Pack some pitas with: hummus, guac (we just mashed avocados with some finely chopped red onion and called it a day), tomatoes, sautéed mushrooms and a store bought veggie burgers 😊 Serve on a bed of spinach and voilà! It literally takes 7 minutes prep time + however long the burgers need to bake for. It couldn't be any easier, go go go!

Summer on a plate 😍 It was so warm and summery on Monday that I couldn't stomach the idea (pun unintended, but required highlighting) of having any hot food πŸ™ˆ When I saw this salad on the menu, I fell in love! I have a soft spot for broccoli florets. I forget how amazing salads can be sometimes, so I really enjoy seeing how you can combine various plants. Also this tofu just tied it all together. As for dessert, I'm not really that much into ice cream, but I am very definitely into brownies, so the dessert was just right πŸ€— Looks like just because vegans eat leaves, doesn't mean they can't have cake! #oopsididitagain #stereotypicalvegan

Not to brag but I have really outdone myself today 😍 I haven't made scrambled tofu in aaaages, but as today marks the first day of the end of third year classes... I decided to kick off with some classics ❀️ This is the first time I used silken tofu for this - usually, I'd use firm tofu. Surprisingly, it works! Probably takes longer to cook, as all the liquid has to evaporate, but if that's not an issue for you, go for it. Fry up some tofu (ideally with garlic and onions), add turmeric for the yellow tint, spices for flavour, veggies and mix it around the pan until it looks good! #scrambledtofu #govegan #vegan

Jazz up your lunches πŸ₯³ Didn't think they'd make much of a difference, but the beetroot wraps were really nice! I am sometimes annoyed about posting pictures of meals like this, because I feel like I'm perpetuating the stereotype of vegans living off grass and leaves. It's so sad that as a society we view "healthy food" as less worthy, exciting or even plainly unpalatable and boring. Why are we viewing foods like this in a negative way? There are tens of thousands of edible plants, offering a myriad of different nutrients and flavours. You can be an omnivore and eat a limited, repetitive diet - excluding animal body parts and fluids does not mean your culinary repertoire has to be narrowed down to salad ✌️ Get curious, try new things! Or like me, throw together some brown rice, lentils, carrots, sweetcorn and kale, add in some nutritional yeast and empty your cupboards a little bit in the process. Just because it's simple, doesn't mean it's plain or unflavoursome. Veganism can be chips and oreos everyday, or it can be smoothies and zoodles - and anything in between! *A plantbased diet is what you make it* (only eat leaves and grass if you really want to😊) #bringthesaladback #eatyourgreens #makeleavesgreatagain
