๐Ÿ˜‹ Kale Cesar Salad ft. @quornusa Naked Chik'n Cutlet. #vegetarian #meatlessmonday

Prepare Kale ๐Ÿฅ— |
Bring 4-6 Cups of water to a rolling boil in a medium
sized pot. Then, add 3.0 cups of fresh kale. Stir leaves,
remove after 30 seconds. Remove kale from hot water,
rinse under cold water. Use cloth to drain excess water
from leaves. Use ghee & coconut oil (or avocado
oil) to massage kale leaves. Let set for 5 minutes.
Next, add chopped red onions, fresh jalapeรฑo peppers and black pepper to taste. Add 1.5 TBSP LITE Cesar Ranch dressing. Mix until well combined. Let stand in fridge for 10-15 minutes.

Prepare Cutlet |
In a bowl, mix 1.5 to 2.0 TBSP vegetable broth and 1/8
TSP Grace Browning, then add to sauce pan on low
medium heat. Add @quornusa Cutlet to pan. Allow the
liquid mixture to coat both sides of cutlet (this gives it
that beautiful color). Season cutlet with black pepper,
cayenne pepper and a pinch of salt. Cook cutlet for
approximately 4-7 minutes on each side (do not
overcook). Towards the last 2-3 minutes, add FRESH
grated garlic to the pan. Remove from heat. Set cutlet aside for one minute, then slice.

Present |
Plate greens, add cutlet on top, along with fresh tomato, avocado and parmesan. ๐Ÿฅ‘๐Ÿง€๐Ÿ˜‹ #enjoy

Thank you all for the love on my previous post!!! To celebrate reaching my health & fitness goals, I did a swimsuit and clothing haul (#linkinbio) to show my progress and to inspire you all to continue. When on your weight loss journey, try to focus less on what the scale says and more on how you feel. Track your progress by measuring your bust, waist and hips. Purchase inexpensive pieces of clothing that are a (slightly) smaller size to allow you to see your body is changing. The female body is so intricate and complex, it changes a lot more than you may know and just know that when you hit a plateau, it doesn't last! Major changes are ahead, so keep thinking of NEW, healthy and realistic ways to improve your health and fitness journey. Owwwww. ๐Ÿ’–๐Ÿ˜

#weightloss | The transformation is just too real. The photo on the left was taken today, before I went to @kidfury's #305live and the photo on the right was taken in February of 2018 ๐Ÿฅ‘๐Ÿ˜Š๐Ÿ’ƒ๐Ÿฝ๐Ÿ‘๐Ÿฝ๐Ÿ’๐Ÿฝโ€โ™€๏ธ ayeee. Back when I posted one to two videos a month on YouTube because I felt like I had failed myself and you all... I was honestly so uncomfortable with how I looked on camera, I didn't WANT to create content.
I started running 1.5 miles a day. I was winded, fatigued and scared. I wrote in my journal daily to confront issues I had been running from... things I've yet to share with you all. I gradually changed my eating habits and slowly worked my way up to running 5.0 miles in under 53 minutes. I didn't want to just lose weight, I didn't resort to popular diet trends or weight loss gimmicks/pills/teas... I cleaned up my diet, transitioned to a vegetarian lifestyle, enjoyed cheat days here and there... to be realistic and to avoid extreme restrictions that might force me to return to my old eating habits. I have the support of family and loved ones... which helps, but they're still eating collard greens with pork... without me ๐Ÿ˜‚ but they're willing to try new things ๐Ÿ’ƒ๐Ÿฝ๐Ÿ’– because of me. My followers encouraged me to go meatless for 30 days and I can't thank you all enough!!!!! This was a change that made all the difference. This is my last damn fitness journey. No more feeling self-conscious, dressing in oversized clothes or reposting old photos because I'm not happy with my current physical/emotional/mental health.
