Rainbow Veg Pad Thai! 😱🌈💕 fast, easy, and adaptable to whatever veggies you have. made with a simple five ingredient pad thai sauce you can just shake up in a jar!

PREP: spiralize or chop your veggies (zucchini, bell pepper, onion, carrots) and saute until slightly softened. place 4 oz of rice noodles in cold water to soften.
.
SAUCE: shake 3 tbsp fish sauce (or a vegan fish sauce sub), 3 tbsp brown sugar, 3 tbsp broth, 2 tbsp white vinegar, 1 tbsp soy sauce, and 1 tsp chili paste in a jar.

COMBINE: add 1 tbsp oil to the pan and add softened noodles. add the sauce and stir fry until thickened. push the noodles to the side and add a beaten egg. add the vegetables and toss everything to combine.

top with peanuts and herbs and serve! .

COCONUT CURRY SOUP, of the anything-you-have variety. seriously this can be made with almost ANY vegetables. ✌🏼 it's silky-smooth and vegan!

SAUTE: Heat oil in pan and add 1 onion, 3 cloves garlic, and 1 knob ginger. Once softened, add 1 tbsp red curry paste, 2 tbsp turmeric, 1 tsp salt 2 tbsp sugar and sauce until fragrant.

BOIL: Add 12 small potatoes, and 24 oz coconut milk, 3 cups broth, and simmer until potatoes have softened.
.
BLEND: Transfer contents of pot to a blender. Blend until smooth.
.
FRY: Press the moisture out of 24 oz tofu, cut into cubes, and fry with oil. Sometimes I add a little bit of soup to get it nice and golden brown.👌🏼

Pour the soup into bowls and top with tofu and whatever veggies you liiiike. It's a soup-salad situation and it's YUMMY.

GENERAL TSO’S CAULIFLOWER ✨ golden brown crispy fried cauliflower tossed in a made-from-scratch spicy sweet sauce. veg lovers unite.

SAUCE: Heat 1 tbsp sesame oil in a pan. Add grated ginger and 3 cloves garlic for a min or two. Add 1/2 cup broth, 1/2 cup soy sauce, 1/3 cup rice vinegar, 1/4 cup sugar, 2 tbsp tomato paste, 2 tbsp cornstarch dissolved in water and simmer until thick.

BATTER: Whisk 1 cup flour, 2/3 cup cornstarch, 1.5 tsp baking powder, 2 tsp salt, 4 eggs. Thin with water as necessary so it's drippy but coats the cauliflower.

FRY: Add oil to a pan over medium heat. Dip cauliflower florets in the batter and set in oil, frying for a few mins on each side until golden brown. Move pieces to a cooling rack.

Toss the fried cauliflower with the sauce and serve! 😋

VEGGIE LASAGNA ... made IN A CROCKPOT 🎉 packed with good-for-you veggies, super easy to make, and made with a handful of simple ingredients. .
WHAT YOU NEED:
(2) 24 ounce jars or cans of Italian tomato sauce
9 uncooked lasagna noodles
24 ounces part-skim ricotta cheese
3-4 cups chopped kale
1 jar of pesto
2 cups shredded Mozzarella
Parmesan cheese for topping
fresh parsley for topping

LAYER IN ORDER:
Tomato sauce
Lasagna noodles (broken) to cover the bottom
Ricotta cheese
Kale
Pesto
Mozzarella
Repeat two times and end with sauce > noodles > sauce > Mozzarella

COOK:
Cover and cook on high for 3 hours or on low for 5-6 hours
Turn crockpot off and let it sit for at least an hour
Serve and enjoy!

4 cups regular brown lentils
2 onions, diced

1 tablespoon garam masala
1½ teaspoon turmeric
2 teaspoon sugar
a few good shakes of cayenne pepper
about 5 1/2 cups of tomato puree
about 7 cups of water
1 teaspoon salt plus more to taste

cook on high for 4-5 hours or low for 7-8 hours. stir in 1/2 cup coconut cream or real cream at the end to make it nice and rich.
