I had to make & eat dinner super late last night, so the lighting leaves a lot to be desired, but it was so delicious!
Stuffed a sketti squash to the max, with ground turkey, sautéed spinach, green onion, cherry tomatoes, kalamata olives, tomato basil sauce, and goat cheese.
Spaghetti squash is seriously one of my favourite things, so easy & yummy, and it keeps me from having to get a bowl dirty!
I've decided I need to be making a lot more of these guys in my future. (This whole thing's only about 450 cals and 30+ grams of protein, byyy the way 😯)
