Pizzoccheri being prepared for its cheesy-potatoey-cabbagey goodness.

Okay, this one isn’t a looker but if you’ve ever eaten Pizzoccheri you’ll appreciate it. Strips of tagliatelle made using buckwheat flour are mixed with sautéed cabbage, floury potatoes and tonnes of gooey cheese. Perfect cold weather comfort. We’d like a bowl for lunch.

So I fell off my perch when an email from Instagram popped up last summer. The upshot was an expedition to Basilicata to film nonne with portrait (not landscape) framing. And very soon.. like today.. their video will be on their IGTV channel. One of the nonne featured is beautiful Lucia, seen here with another Lucia - her neighbour and friend for 60 years. Here’s Nina making Pizzicotti. Remember the Readybrek adverts and fuzzy glow of internal central heating? This is the Italian equivalent for farmers in Abruzzo. Leftover bread or pizza dough is kneaded, rolled out thick, cut into strips and pinched off into boiling water. The dumplings are served with oil, garlic and hot peppercorns. Despite the description, they’re lighter than you’d imagine but exactly the kind of comfort food we needed in the freezing temperatures. We’d love a bowl right now!

Throwback to Abruzzo back in December when 86 year old Nunziatina made Frascarelli. She uses 00 flour and egg and rubs the dough into tiny pieces, almost like couscous. The sieve, ‘setaccio’, and the scraper, ‘paletta’, are her useful pasta tools.
