Fettuccine with prawn lemon and chilli: ———————————————————
200g peeled raw prawns
1 clove of garlic, peeled and finely chopped
zest of half a lemon
2 tbs xv olive oil
50ml white wine
1 fresh hot chilli, chopped finely
salt & pepper
1 bunch of parsley, finely chopped
Heat olive oil in a pan on medium heat, add lemon zest and cook till crispy, add garlic and stir till lightly coloured, chilli and prawns, cook for a few minutes till prawns change colour, then add the wine and season to taste. Cook until the wine has evaporated and glistening slightly viscus sauce remains.
Cook your fettuccine in salted boiling water. Fresh Fettuccine cooks in just a couple of minutes so drain early and reserve half a glass of the water. Add to prawns with a few tbs of the reserved water. Finish the fettuccine in the pan, when the sauce has become creamy they are ready, add parsley and serve immediately with a nice glass of Gutturnio.
