1 minute to get the ingredients out. 1 minute to cook the eggs and tomatoes simultaneously in 2 different pans, and 3 minutes to assemble, plate and get it on the table! Ingredients (This serves one, just increase ingredients for more servings. Prep and cook time is the same)
1. Fry egg in a little butter until desired doneness At the same time fry cherry tomatoes in a teaspoon of olive oil on medium heat. Add a few splashes of balsamic vinegar and toss to coat. Cook until skins split. Remove tomatoes from heat. A little balsamic remains in pan and will become thick and syrupy. Keep this for the finished dish. 2. Sandwich the 3 rice cakes together with the cream cheese, stacking one of top of the other. Spread cream cheese on the top of the last rice cake too. 3. Top with the fried egg. 4. Scatter tomatoes and basil leaves over. Season with salt and freshly cracked black pepper. 5. Dot remaining syrupy balsamic vinegar from the pan all around. And Voilà! A 5 star breakfast, in 5 simple steps, in 5 minutes!
