This cabinet brings me joy. I like the way glass jars make the food look like clothes ready to be tried on at a posh shop. I’m going through my kitchen one cabinet at a time to do a deep clean and purge. This cabinet didn’t need much work, but there were some jars that needed to be emptied of their contents. I also filled the bottom jar towards the right with a fresh batch of granola. I finally recorded the cooking tutorial for this recipe. I’ll edit and post the video next week in my YouTube channel InshaAllah. In the meantime, here’s the recipe: 3 cups oatmeal, 2 cups almond meal, 1/3-1/2 cup of honey, 1/2-3/4 cup of coconut oil, 3 teaspoons of cinnamon, 1/2 cup of sliced almonds, 1/2 cup of crushed pecans and 2 cups of raisins.
In a large bowl, mix raisins, honey and coconut oil. Mix in almond meal until all the raisins are coated. This will help them from burning while they’re being baked. Add remaining ingredients and mix well. Add more honey and coconut oil as needed to coat the mixture. Spread onto a baking sheet and bake at 350 degrees for 15-20 minutes. Check after 10 minutes to make sure the raisins do t burn. Let cool before eating and let it cool for at least an hour before transferring to an air tight container.     Thank you! Great timing for me. We started making our own Almond milk this year to cut down on plastic usage and waste. I’ve been looking all over for recipes to use the almond meal left overs. 🙏
