#Blackbean and #burger #salad. One of my favorite recipes for lunch or dinner! I modified this from one of our portion controlled cookbooks! It’s sooo good!
1/3 cup olive oil, 1/3 cup lime juice, 1 tbsp cumin, 1 tsp sea salt, 1 tbsp cilantro, 1 can drained black beans, 8 oz frozen corn, 1 diced yellow bell pepper, 1 diced orange bell pepper, 1 cup lean ground beef. You can substitute the beef for quinoa for a vegetarian option! Yum! 😋
