For vegan carrot top pesto, here's a tip - instead of using Parmesan cheese, soak cashews over night and crate a creamy Parmesan sauce by mixing them with apple cider vinegar, chickpea miso, and a little fresh Lemmon juice. Once in the sauce, it tastes remarkably similar to Parmesan, and has medicinal benefits to boot!
