Roasted Hasselback Pesto Potatoes!! Best thing ever!!! 😜
Recipe here:
1 kg large baking potatoes
Drizzle of olive oil
Pinch of salt
1 tbsp chopped rosemary
2 tbsp pesto
2 tbsp parmesan flakes
Method:
1. Preheat oven at 200 degrees celsius.
2. Using a pair of chopsticks. Place on both sides of the potato. This will stop the knife from slicing all the way through.
3. Slice the potatoes thinly, approximately 2mm apart.
4. Drizzle with olive oil, sprinkle of salt and rosemary.
5. Roast in the oven for 45 mins to 1 hour (depending on the size of your potatoes).
6. Once cooked, serve with pesto and a sprinkle of parmesan flakes.
7. Soooooo good... I’m drooling 😜
