Holy wow let's all just stop for a minute and appreciate the joy of a kale pizza crust. It's like sexy crispy seaweed topped with all of my favourite things. Plus we should all eat iron so we don't die.
Preheat that oven to 180c fan while you...
Whizz up a whole bag of kale in the nutribullet πŸ’š mix in a finely chopped clove of garlic and two eggs 🐣, then squish out the water (technical term) and spread the mixture over a baking tray. This time I used a silicone sheet on the tray rather than parchment paper, worked like a dream FYI.
Pop in the oven for 20 mins. And stare at it πŸ‘€
When it's crispy to touch, start topping! I went for low fat pesto and loads of spinach πŸƒ, Vitoria tomatoes πŸ…, that magic low fat mozzarella πŸ§€ and my bae bresaola πŸ’•. Back in the oven, for ten mins liberally sprinkled with oregano (pretending it's glitter) and you're good to slice and inhale.
