#tacotuesday saves the day! I needed some quick eats that take less than 30 minutes to make. You see, tomorrow we’re taking off on a little camping trip in the mountains ⛰ I’ve been running around the house like a chicken with it’s head cut off since this morning 🐔 Trying to pack up my babes for this adventure is hard work, my brain is burning 🔥 Luckily I always have taco 🌮 wraps in the freezer ready for action. This meal literally took minutes to make 🙌🏻 all you need is canned beans some fresh veg, cilantro, salsa, plain yogurt 👍🏻 you’re set!

Double tap if you love fries 🍟 I’m often asked how I make my fries because they always come out super crispy and delicious looking ☺️

It’s actually super easy, here is the how to👇🏻
.
1️⃣peel and chop potatoes into fries
2️⃣drizzle potatoes with @ChosenFoods avocado oil 🔥 I really like using this oil because the smoke point is sooo high (500f peeps!) making it ideal for making fries 3️⃣Next I spice my fries with pink salt, garlic powder, onion powder and paprika
4️⃣I spread the fries on a cookie sheet lined with parchment paper. (It doesn’t have to be perfect, my fries are usually on top of each other)
5️⃣I Heat up the oven to 400f and bake the fries until the bottoms become crispy (35 minutes, depending on thickness)
6️⃣Once your bottoms are golden I like to switch my oven to broil and crisp the fries from the top. It doesn’t take very long so watch them like a hawk. Within minutes your fries start looking golden and delicious

🥔Do give this method a try, I’m telling ya it works! There is no need to toss, flip or turn! you just let the oven do its thing.

Here is that muffin you’ve been asking for. It’s actually a recipe for banana bread but who cares 🙈

Ingredients
🍌1 cup of white buckwheat flour
🍌1/4 cup of almond flour
🍌1/2 cup of plain yogurt
🍌3/4 cup mashed banana
🍌1 egg
🍌1 tsp vanilla
🍌1/4 - 1/2 cup maple syrup
🍌1 tsp baking powder
🍌1 tsp baking soda
🍌2 tbsp coconut oil

Preheat oven to 350F. Mix all ingredients together. Using an ice cream scooper drop batter into muffin liners. Bake for 30-35 minutes

Another day another dinner. Oven baked sweet potatoes, pinto beans and a salad. Not just any salad, this has been my go to salad. It’s delicious and goes amazing with sweet potatoes 🍠 .
For the dressing (1 cup of dressing)
🔹1/3 cup apple cider vinegar
🔹2/3 cup olive oil
🔹2 tbsp pure maple syrup
For the salad
🌱Spinach
🥒Cucumbers
😥Red onion
🍓Strawberries
🥦Broccoli florets
🐿Roasted sunflower seeds

I wanted to show you what meals look like when I’m running low on food in the fridge. I mostly look in my freezer and try to come up with healthy meal options no matter what the situation is.

👯‍♀️For reference I am feeding a 3 year old and a 14 month old
.
8:00am BREAKFAST
I always have Buckwheat flour on hand so I made “greenish” blueberry pancakes with the last bit of wilted spinach. Frozen mango, blueberries and apple sauce on the side. Maple syrup for the 3 year old
.
10:00am SNACK
I put out a little snack plate of carrot slices, raisins, soaked almond and cashews. The kiddo munched on this little snack all day. It literally took all day 😆
.
12:00pm LUNCH
I had a few eggs lying around so I thought I’d try making deviled eggs. To my surprise they went over well. I used @chosenfoods mayo and mashed the yolks with turmeric, pepper and pink salt. I paired the eggs with avocado cracker and cucumber slices
.
5:00pm DINNER
Frozen is the key ingredient here. I had frozen cauliflower rice kicking around so I cooked it with turmeric, salt and pepper to bump up the flavour. I mixed half of that with leftover rice for the 3 year old. For the veggies I steamed up frozen peas and broccoli, added a little bit of grass fed butter and pink salt. I also made a rather gross looking green lentil stew that my 3 year old only looked at 🙄 The 14 month old didn’t seem to care and ate her portion.

6:00pm SNACK
Immediately after dinner my 3 year old asked for a banana, and since dinner wasn’t much of success she wolf down the banana no prob.

Creature of habit over here 🙋‍♀️if I’m making fries you better believe I’m making vegan nacho cheese. No shame in my game! I like them fries covered in this stuff (I had to go easy for the picture otherwise you wouldn’t be able to see the fries 🙈)✌🏻

Here is what went in my Sauce this time (I make it so often it changes on the weekly basis)
🔹1 cup cubed potato
🔹1/2 cup carrot, chopped
🔹2 tbsp avocado oil
🔹1/4 cup unsweetened almond milk
🔹2 Tbsp ketchup
🔹2 tsp lemon juice
🔹1 tsp garlic powder
🔹1/2 tsp onion powder
🔹1/2 tsp salt
🔹1/2 tsp smoked paprika
🔹1/4 tsp turmeric
🔹1/4 cup soaked cashews
🔹sprinkle of pepper
1⃣boil potatoes, carrots until soft 2⃣drain water 3⃣combine all ingredients in the #vitamix 4️⃣blend until creamy and smooth

Today while I was grocery shopping. We walked by the bakery. All those cakes, cupcakes and cookies🥖🍩🍪The smell of baked goodies was fresh in the air. I grabbed a box of muffins out of curiosity and read the ingredients 🤦‍♀️ I swear every year they add more and more junk. I explained to my 3 year old that we wouldn’t be buying the muffins and instead we would make a batch of muffins at home 😅

Why is it that our stores are filled with such horrible ingredients? I should be able to pick up a box of muffin that’s only made of flour, eggs, sugar, baking powder, vanilla, and water. 🤷‍♀️When did things change? How did we go from real ingredients to chemicals in our food? Why is this okay? I want real ingredients back👊🏻

Cravings got me all crazy this morning 😜 I needed something sweet, stat! Insert protein “pancake” it’s just eggs, banana, vanilla and cinnamon. It was delicious, went amazing with a big cup of coffee and it got the job done 😅

I’m not sleeping lately, i may be good at feeding my babies healthy food but I can’t quite figure out the whole sleeping thing 😆 hour after hour, the 14 month kept me up. I might have to sleep standing up while holding the baby 😩

7:30am BREAKFAST
Green eggs and no ham 😆 but seriously. Spinach eggs, sweet potatoes from the other night, and strawberries.

9:30am SMOOTHIE 🍫
Chocolate smoothie for the 3 year old 👉🏻 1 tbsp raw cacao, 1 tsp @greatlakesgelatin collagen, 1/2 tbsp almond butter, couple small leaves of kale, 1 date, 1 frozen banana, 1/2 cup steamed and frozen cauliflower, water and a few ice cubes. This wasn’t the tastiest smoothie but the 3 year old absolutely loved it, go figure

12:00pm LUNCH
Lunch was a bunch of random stuff for everyone. The 14 month old didn’t finish her morning eggs so she had leftovers, a dollop of plain full fat yogurt, cucumber slices and sauerkraut. The 3 year old got yogurt with frozen blueberries, raw veggies, olives, sauerkraut and some soaked almonds. She saw me make eggs for my lunch so she immediately asked for one too.

2:30pm SNACK
Apples sprinkled with Ceylon cinnamon, almond butter and sunflower sprinkles.

3:00pm COOKIE
I baked some almond flour cookies so the kiddo insisted to test and make sure they were delicious
.
5:30pm DINNER
Quinoa/brown rice mix, falafel and roasted broccoli, with yogurt for dipping. Oh and a side of raw broccoli stems for the 3 year old - she loves those things 🤷‍♀️

7:00pm ANOTHER SNACK
The 3 year old asked for a banana, so that’s what she got
.
This was a jam packed day of eating. I feel like my 3 year old ate quite a bit today. Not sure if she’s going through a growing stage or if it was just one of those days. That’s why it’s good to look at the whole week of eating as opposed to only focusing on 1 day. Some days we eat lots and some days not so much. So don’t stress mamas ✌🏻

🥛💧And as always between meals the 3 year old has water and the 14 month old drinks water plus breast milk.

Sometimes I scroll through my Instagram and find the most elaborate, beautiful meals and snacks I’ve ever seen. I’m immediately drawn to the photo but can’t ignore the fact that its not real life (for me anyway) This here 👆🏻thats real life for me. This is our pre dinner snack. Simple real food. Half a grated carrot & some strawberries that are on their last legs.

Do I shower or treat myself to a delicious meal??? Hmmmm 🤔Most days I don’t have time to do everything I want.... shower, healthy cooked meal, a snooze, a workout... so, I cheat 🙊 I take a shower as fast as my little body can and instead of cooking myself a delicious lunch I cut corners👊🏻 I make a jam packed smoothie that holds me for long periods of time. The secret to a filling smoothie? Lots of healthy fats! In my case - avocado and almond butter 😎
