On days when Zoey goes to #preschool I aim for a super fast breakfast option with a little pow💥I ain’t got no time for fancy waffles or eggs so we opt out for a smoothie bowl and pack an extra big snack for school 👍🏻

🌸3/4 of a frozen banana
🌸small chunk of frozen cauliflower
🌸1/2 cup almond milk
🌸handful of spinach
🌸1/2 tbsp collagen
🌸pinch of vanilla bean powder
🌸1/2 tbsp almond butter
🌀blend and top with fruit & bee pollen

This is what I do when the fruit starts looking rather sad 😩 I throw it into my blender add a bit of vanilla annnd presto! a delicious spread/dip. No sugar added, no weird ingredients to make it last long. Just fruit! perfect for kids that like to dip or jam it up 🙌🏻

My 4 year old starts pre-kindergarten tomorrow 😭 where did the time go 🤔 it’s a little bitter sweet because I’m so sad she’s growing up but at the same time I’m doing a bit of a mom dance 💃 less kids in the house = more time for me (not!)

👉🏻I made the chocolate chia sauce by blending together chia seeds, raw cacao, almond milk and dates. I set the sauce aside to thicken up, gave my blender a quick rinse and started on the pancakes. To my blender I added a couple of eggs, buckwheat flour, banana, spinach, vanilla, baking soda, pinch of salt and a splash of almond milk. I poured the pancake mix on to a lightly greased cast iron skillet and cooked the pancakes for a few minutes on each side. I stacked the cakes as high as possible and drizzled the sauce on top while my toddler decorated/ate most of the raspberries.

Raw dessert was on my list of things to do today. I really wanted to use up some ripe avocados I had lying around ☝🏻 so I dusted off my food processor and made some mini lime avocado tarts 👌🏻 surprisingly they were super delicious, and no one even knew that they were made from avocado 🥑

(For the crust)
🥑1/2 cup almond meal
🥑1/2 cup nuts (I used hazelnuts & pecans)
🥑1 cup of dates
🥑dash of sea salt
(For the filling)
🥑2 large ripe avocados
🥑1/4 cup maple syrup
🥑juice from half a lime
🥑lime zest from a whole lime
.
🥧For the crust: blend dates, nuts , salt and almond meal in a food processor until it turns sticky. Press the mix into a pie shell or 3 mini tart pans. Place in the freezer.
🥧For the filling: place avocado, syrup, lime juice and zest in the processor and mix until creamy.
🥧Take tart crust out of the freezer and pour in the avocado mix. Place in the freezer for couple hours and serve
Optional: top with blueberries 👌🏻

Extra creamy unsweetened vanilla almond milk ingredients
.
🥛2 cups almonds
🥛4 cups filtered water
🥛pinch of sea salt
🥛splash of vanilla extract
.
1️⃣Soak almonds in water for 12-24 hours
2️⃣Rinse and drain the water
☝🏻I remove the almond skins which results in a lighter coloured milk and remove that slightly bitter taste 👌🏻
3️⃣Add soaked almonds, 4 cups of water and sea salt to your vitamix and blend on high speed for 2 minutes
4️⃣Strain through a nut milk bag and store in the fridge for up to 4 days
.
⭐️The reason why I make my own milk is because the store stuff is always full of unwanted ingredients. I’ll say one thing - Just because a product is plant based, organic or natural it doesn’t make it healthy. Please read your labels✌🏻

For me, it’s always been a matter of overeating. I remember when I was in my early twenties I would buy a box of cookies and polish the whole damn box. I had zero control of when it was enough. Now I really try to be conscious of when I’m actually full. And even though my meals are healthy now, I still have a tendency to overeat. ✌🏻

🍳This delicious egg fried in toast is sure to satisfy any #pickyeater. I mean comeon, it’s #toast.

Here’s how it’s made
👉🏻 press a hole or a heart in the center of your bread. Today I’m using @littlenorthernbakehouse Gluten free bread. Melt butter or coconut oil in your skillet. Toast one side of your bread, flip and crack an egg directly in the center of the hole. Let the egg cook until the whites set or after about a minute flip it over with a spatula to cook the other side. .
