My perfect ‘tofu’ scramble recipe:

250g Firm drained tofu
1tsp Nutritional yeast
7g Gram flour
50ml dairy free milk (I used @rebel_kitchen whole milk)
1/4 tsp Garlic powder
1/4 tsp Turmeric
1/2 tsp black salt or regular will work
Pinch black pepper
3 finely sliced spring onions
1 tbsp Dairy drew spread
1. Place a little olive oil in a frying pan and add tofu. Break down and mash with a fork until it looks like scrambled egg. Cook until a little golden, then add spring onions.
2. Mix the nutritional yeast, gram flour and milk together until smooth. Set aside.
3. Add garlic powder, salt, pepper and turmeric to the pan. Cook for a few mins.
4. Turn heat down low and add milk mixture. Gently fold the tofu over until it starts to thicken. Turn heat off and add dairy free spread. Let it melt a little and then fold in. Serve straight away.

110g Dairy free spread
100g Caster sugar
100g Soft brown sugar
2 tsp Vanilla bean paste
200g Plain flour (gf also works)
1 tsp Bicarbonate of soda
1/4 tsp Salt
1 tbsp Dairy free milk
200g macadamias blended to a crumb

1. Cream the spread and sugar together either with a spoon or mixer.
2. Add all other ingredients to bowl and use mixer or spoon to bring together and form a dough.
3. Pull 50g from the dough, roll into a ball and place on a baking tray. Flatten very lightly with hand. Repeat with rest of dough.
4. Bake in a preheated oven at 180c for 15mins.
5. Let them cool before moving, they will feel soft but go crispy and chewy once cooled!
6. Dunk in milk until you feel super stuffed 😉✌️

Tonight I ate lots of 🍕 and I liked it. 🤪

Bit bummed out as the yeast I used for my pizza was too old and didn’t activate but the flavour of the dough was on point and the tomato sauce.
