Busy days call for kitchen sink bowls of leftovers. 🥗 🥑🍗🌶And I ain't mad about it! 💁🏼I actually love the feeling of running around and being productive. 🤓 But I still want to eat a balanced, tasty meal that I can mindfully enjoy. 😊 That's why having the right food prepped in my fridge is so key 🔑 On that note, I'm gonna go enjoy this lunch and get back to it. When you can't decide, go for both! I woke up craving 🥑 and 🍳 but also knew I had such great 🍓 sitting in my fridge. Maybe that's why I love English muffins -- you have 2 opportunities to satisfy your cravings 😋 I always love starting off my day with a breakfast that makes me smile! 😊HAPPY FRIDAY FRIENDS! ✌🏻❤️

First there were zoodles. Now there are ZOATS! That's right! I just took my Carrot Cake Oats recipe and swapped out the carrot for a zucchini. 🥕🔁🥒(Okay, that might actually be a cucumber, but just go with it...🤷🏼‍♀️) Point is, these were delicious and I love the fact that I'm getting more ✔️vitamins, ✔️minerals, and ✔️fiber from such a simple move. I'm also still adding in egg whites so I'm getting the protein I need as well to fuel me for my day. 💪🏻👊🏻 And on that note, have a beautiful day my dears! ✌🏻❤️

This, my friends, is what MEAL PREP looks like! This, my friends, is not a picture taken in real time ❌because instead of batch cooking this weekend, I spent my Sunday with some pretty awesome dads. What can I say? I'm human. 💁🏼Aside from an absurd amount of nuts, nut butters, and almond milk, the contents of my fridge are meager. 🆘 However, I did manage to salvage some leftover salad and BBQ chicken from my Father's Day BBQ 🍗 (#noshame) which I'm going to have for dinner BUT I wanted to spruce it up a bit, so I'm sharing one of my favorite go-to dishes that helps me get dinner on the table in a pinch. ✨Check out my IG story for deets on how to make those mini roasted peppers that you see on the top right of this pic. 🌶🌶🌶They're so healthy, so delicious, and SO EASY to make. 💯WIN-WIN-WIN!!!

✨✨DINNER INSPO! ✨✨Because we all need some now and again, don't we? I know I do. 💁🏼Made this corn succotash this week and it was BEYOND! 🥕🌽🍅🥒🍆It's got all the colors of the 🌈, which means I know I'm doing something good for myself. It basically tastes like summer in my mouth. And the best part? It's so easy and quick to make! 🙌🏻Here's the play by play: ✔️Dice up some zucchini and carrots and sauté them in some olive oil and sea salt. ✔️Cut 🌽 off the cob and throw that in the pan too. ✔️Let them hang out to get nice and tender. ✔️ Add in a tablespoon or so of dried basil (If you have fresh, which is even better, hold off and add in later so it doesn't wilt too much.) ✔️Halve some cherry tomatoes, and throw those in as well. ✔️Finally add in raw sprouted legumes and the fresh basil, if you're using fresh. ✔️Everything sit for a few more minutes, and it's done! 🤗 As you can see, this is hardly a strict recipe so feel free to play around with it. K, now I gotta go cook my dinner for tonight.😋HAPPY FRIDAY FRIENDS! ✌🏻❤️

🥕CARROT 🥕CAKE 🥕OATS 🥕 I've been meaning to try this one all year long and I finally got around to it! To be honest, it's probably more appropriate for winter because lately all I've been craving is fresh berries in my breakfasts, but whatevs, it's still so good! 💁🏼See below for deets 👇🏻. Have a beautiful day! ✌🏻❤️ ✔️1 cup @califiafarms almond milk ✔️1/4 cup @bobsredmill steel cut oats ✔️1/4 cup grated carrot ✔️1/4 cup egg whites ✔️2 tsp vanilla extract ✔️1 tsp @navitasorganics maca ✔️1 tsp @bobsredmill coconut flour ✔️1/8 tsp cinnamon ✔️pinch @simplyorganicfoods nutmeg and cardamom ✔️top with walnuts, coconut, and @santacruzorganic pb drizzle

Sometimes simple is all you need. 💁🏼Let's be real, we can't always put together gourmet, 5 star meals. (womp, womp 🙇🏼‍♀️) But when your ingredients are fresh, keeping things uncomplicated may actually be your best move! 🤗this week I got the most delicious lettuce and mushrooms from my @rusticrootsdelivery. I sautéed the shrooms with some garlic, olive oil, and balsamic vinegar. Kept the lettuce raw, and combined that with 1/2 avocado 🥑, bell pepper 🌶, and some oil-canned tuna (I prefer it to water-canned) with @mailleus Dijon mustard. The result? Deliciously fresh perfection! 🙌🏻

RISE and SHINE my dears! ☀️ Remember those strawberries I got from @rusticrootsdelivery? 🍓🍓Well, I just HAD to make my STRAWBERRIES N CREAM 🍓🥛🍓🥛oats and let me tell you, it was BEYOND! 🙆🏼I wish I could go back in time and eat them all over again! Rainy days call for a warm comforting bowl of oats. These are particularly delicious with the help of peanut butter 🥜 🥜🥜because well, peanut butter just makes everything better. 💁🏼(In my opinion, at least! 😜) Recipe for this bowl of goodness is coming to the blog soon! 🍓🍦STRAWBERRIES N CREAM🍦🍓for breakfast on this rainy Thursday morning. As you know, I've been loving my oats with egg whites - extra protein and extra creamy. Today I decided to bump up the flavor and fiber by adding some strawberries into the mix. 🍓🍓🍓It was DELICIOUS! 😋Brought me back to childhood when I used to eat those oatmeal packets. 🙊Except these have 🙅🏼ZERO added sugar, 🙅🏼ZERO refined carbs, and are 🙆🏼FULL of healthy fats, protein, and fiber. 👍🏻💯👌🏻Recipe is up on the blog!
