Raspberries cream cheese brownies, recipe from @alona_sulimenko
Tangy Raspberries, sweetness of dark chocolate and cream cheese fillings 🙉 Oh Yumm......
👉Cream cheese fillings:
250g cream cheese (room temperature)
30g white sugar
1 egg yolk
100g all purpose flour
180g dark chocolate (I use 75%)
40g sugar (reduced, I use molasses sugar)
1/4 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
2 eggs + 1 egg whites
1⃣Whisk cream cheese fillings ingredients until well combined and set aside
2⃣Melt butter and dark chocolate on water bath, mix in sugar while the mixture still warm. Let it cool down for 10mins.
3⃣Add eggs and egg white gradually into the dark chocolate mixture and whisk well.
4⃣Gradually mix in flour mixture (flour, baking powder and salt) until well combined, don't over mix
5⃣Grease baking tray with oil and line with parchment paper. Pour half of the chocolate mixture follow by all cream cheese filling, cover with another half of chocolate mixture. Top with raspberries. Run a skewer on top to create marble pattern (otional).
6⃣Bake at 170c for 60 to 70 mins
7⃣To check whether the brownies is ready, the edge should be firm and crunchy, the middle should be dense, but not firm
