Fact about Chicago: Our summers are incredible - both months. πŸ˜‚ Last weekend was just another example of why I love #summertimechi My friend and I met up at Millennium Park to take pictures (she just got herself a camera) without realizing that it was the second night of the "Music of John Williams" Concert. Not only did tons show up to listen, but so many people came dressed up, including this T-Rex who was probably as excited as I was to hear the theme from Jurassic Park played by the orchestra. πŸ€— Seeing so many people come together to celebrate classical music, epic cinema, and a gorgeous night in the city was beyond uplifting. ❀️Did anyone else catch this concert? What were you excited to hear?? 🎢

Monday is a great day for fresh starts and fresh basil! πŸƒ(Ok, everyday is a great day for fresh basil.) Since green inspires creativity, I'd love to know - What creative projects are you working on this week? I'm putting the final touches on my blog, editing a bajillion photos, learning some new music, and am starting a new class! πŸ™Œ Let's go Monday! (Side note: this is my mom's fresh basil. I have some on my kitchen windowsill, but it's not as photogenic. πŸ€·β€β™€οΈ)

If you're in Chicago and you love chocolate, the Valrhona Cupcake from @morecupcakeschicago is a chocolate lover's dream! It's easily one of the most decadent treats I've ever had, and I just love their beautiful shop. This is a chocolate cupcake, filled with a luscious dark chocolate mousse, topped with rich, dark chocolate ganache and garnished with edible gold leaf. Made these simple and yummy Pesto & Parmesean Palmiers a little while ago using some of the delicious @bluemooseofboulder pesto that Teri from @nocrumbsleft was so kind to send me. If you're hosting a gathering and need a quick and easy appetizer, you can't go wrong with these. All you need is a rectangular sheet of puff pastry, a few tablespoons of pesto, a sprinkle of Parmesan cheese, and an egg for an egg wash! Hope everyone is having a fun and safe holiday! β€οΈπŸ’™

Of course a milestone birthday called for an epic #tinycake! πŸŽ‚ I am so grateful for everyone's kind words and love yesterday. Birthdays are always a nice time for reflection, and I realized that I truly have so, so much for which to be thankful, hopeful, and excited. Side note - I finally figured out how to make a drip cake! My friends and I had a tough time cutting into this one ☺️. The cake is a little bit like me. It's a little dainty, a little sparkly, and full of cookies (oreo buttercream to be exact.) πŸ˜‚ πŸ˜‚ πŸ˜‚

While I was on vacation, my sis had her heart set on making those super fluffy SoufflΓ© Pancakes #πŸ₯ž so we made them our last morning together. I was responsible for my favorite part, whipping the egg whites and incorporating them into the batter (that's how they get so fluffy.) Also, I don't know why I love whisks and whipping egg whites so much, but I do. I topped them with a blueberry orange sauce, some maple syrup and a little mint from my mom's walled herb garden you can see there in the back. In my continued effort to show that I enjoy eating more than just donuts, macarons, and things covered in buttercream frosting πŸ˜‚, I created this curry roasted kale salad with pickled radishes drizzled in a curry vinaigrette. It was supposed to serve two, but it was so dang good I ate the whole dang pan. πŸ€¦β€β™€οΈ πŸ€·β€β™€οΈAt least it was a whole pan of a delicious superfood. πŸƒ

It's not a proper trip home without a trip to @dandeedonuts ! We picked up some treats for the whole family to enjoy including the actual "Dandee Donut" (front row center) it's got a pillow like texture with a streusel topping. πŸ’•πŸ©

Blueberry tarragon chicken salad sammies with crunchy toasted almonds - another recipe to add to the summer picnic food repertoire! Fun fact, both this recipe as well as the soup in my last post were made using a store-bought rotisserie chicken! Using them saves me tons of time, plus I made two unique recipes out of it! Do you like to use rotisserie chickens to save a step in your cooking process? What do you like making?

I don't know how I've been this lucky, but I seriously cannot remember the last time I caught a cold. πŸ€§πŸ€·β€β™€οΈπŸ˜² (And now I'm hoping I didn't just jinx myself!) I have no idea how I've been able to ward them off, but just in case I catch a bug this summer, I came up with a hearty chicken soup recipe that's packed with fresh summer veggies and LOTS of couscous.🍲 I topped this bowl off with a dollop of pesto for a big pop of flavor too. Have you ever added pesto to soup? It's my new favorite thing and such an easy flavor boost! Here's to a cold-free summer for all! .

Over the weekend I was inspired to cook tons of summer veggie salads πŸƒ, and the first one I whipped up was this savory roasted mediterranean eggplant salad drizzled in a tangy yogurt sauce. Ever since then, I've seen eggplant recipes popping up everywhere! There's even a gorgeous one on the cover of @foodandwine this month! Is eggplant a trending summer veggie or perhaps just a solid standard? Either way, It's one of my favs for sure! This salad is great served cold, and a sprinkle of mint adds a nice touch of slightly sweet freshness. Recipe coming at ya soon. πŸ˜‹
