2 c shredded hashbrowns
2 c baby spinach, packed
1/4 c red bell pepper, chopped
1/4 c green bell pepper, chopped
1/4 c onion, chopped
10-12 small mushrooms, chopped
2 tablespoons olive oil
1 teaspoon creole seasoning
1 1/2 c cheese - your choice
2 c Milk -your choice
1/2 c broccoli, chopped
1/2 c cauliflower, chopped
1/2 c asparagus, chopped
Preheat oven to 350 degrees
sauté the veggies on medium - high heat separately in a skillet before layering them in.
Sauté the mushrooms,separate from the veggies.
Add a tablespoon of olive oil to a 9×13 casserole dish Coding the bottom and sides of the dish with the olive oil
Then add in the hash brown, pack them in firm.
Next, whisk the eggs, creole seasoning and milk in a bowl and set it aside.
Add veggies and mushrooms on top of the potatoes and drizzle on your egg mixture. Top it with your favorite cheese.
bake for 45 minutes on 350 degrees.
