Walking off dinner because weekend calories don’t count..right? 😬🤷🏼‍♀️

🌱VEGAN jackfruit TACOS🌮 .
I’m always looking for a (quick) healthy alternative to my favorite foods and this one did not disappoint. Jackfruit is low in calorie, high in fiber, vitamins, minerals and antioxidants. It has the texture of pulled pork and when seasoned it totally tastes like carnitas.

Ingredients:
1 small onion, thinly sliced
1 can jackfruit (20 ounces) in water or brine (trader joes sells it) or @thejackfruitco makes a marinated pulled jackfruit that you could use too.
1 packet of taco seasoning (I said this was easy) 😋
Olive oil and salt, as needed
for serving: tortillas, avocado , jalapeños , cilantro, limes, whatever taco toppings you love!

Directions:
Heat a drizzle of olive oil in a large skillet over medium-high heat. Add the thinly sliced onion and saute for 4-5 minutes, until softened and lightly caramelized.
Meanwhile, drain and shred the jackfruit (if yours doesn’t come already shredded) – it should pull apart easily into shreds that look like pulled chicken/pork. If there are any round knobby pieces in there, or any of the core that doesn’t shred the same way, they’re totally fine. The texture and flavor are no different, and you won’t notice them once everything’s cooked.
Add the jackfruit and taco seasoning to the pan. Stir to evenly distribute the spices and cook until the jackfruit is slightly crisped on the edges. Season with salt, to taste.
Next time I will add beans to give it some protein .

Tortilla soup 🥑 Not even joking when I say this is my favorite recipe and I make it a couple times a month. It’s SO easy and I make in a slow cooker.

Ingredients
32 oz. organic chicken broth
2 cans diced tomatoes with green chilies
1 1/4 cups finely chopped yellow onion
3 cloves garlic, minced
1 1/2 tbsp. chili powder
2 tsp. ground cumin
2 tsp. cayenne pepper (optional if you like heat)
Salt and freshly ground black pepper, to taste
1 rotisserie chicken pulled
1 can black beans, drained and rinsed
1 can of corn

For Toppings:
Tortilla strips or tortilla chips
Shredded cheddar or Monterey jack cheese
Diced avocado, sour cream (optional)
1 Tbsp. fresh lime juice
1/4 cup chopped fresh cilantro .

Instructions:
Pour chicken broth, diced tomatoes, black beans and corn into a slow cooker. Sautee onion and garlic on stove add to slow cooker when finished.
Add pulled rotisserie chicken.
Add chili powder, cumin, cayenne pepper and season with salt and pepper to taste.
Allow to cook until heated through. .
Serve warm with Toppings. It’s all about the toppings so don’t skip them!! Enjoy!
Tip: if you broth is lighter in color add more chili powder, it should look like the picture. 🤤🤤🤤🤤🤤
