Tortilla soup 🥑 Not even joking when I say this is my favorite recipe and I make it a couple times a month. It’s SO easy and I make in a slow cooker.
32 oz. organic chicken broth
2 cans diced tomatoes with green chilies
1 1/4 cups finely chopped yellow onion
3 cloves garlic, minced
1 1/2 tbsp. chili powder
2 tsp. ground cumin
2 tsp. cayenne pepper (optional if you like heat)
Salt and freshly ground black pepper, to taste
1 rotisserie chicken pulled
1 can black beans, drained and rinsed
1 can of corn
Tortilla strips or tortilla chips
Shredded cheddar or Monterey jack cheese
Diced avocado, sour cream (optional)
1 Tbsp. fresh lime juice
1/4 cup chopped fresh cilantro .
Pour chicken broth, diced tomatoes, black beans and corn into a slow cooker. Sautee onion and garlic on stove add to slow cooker when finished.
Add pulled rotisserie chicken.
Add chili powder, cumin, cayenne pepper and season with salt and pepper to taste.
Allow to cook until heated through. .
Serve warm with Toppings. It’s all about the toppings so don’t skip them!! Enjoy!
Tip: if you broth is lighter in color add more chili powder, it should look like the picture. 🤤🤤🤤🤤🤤
