• MASTERCLASS • Cloverdel is pleased to announce our upcoming culinary Masterclass: The Autumnal Kitchen with Kathryn Russack and Hal Riches on Sunday 7th May 2017.
Authentic and classically-trained chefs and life partners, Kathryn and Hal, team up in the Cloverdel Kitchen to guide you through a generous 4-course offering complimented by specially chosen, regional wines that balance and enrich the flavours of each dish. Together, they will design the Autumnal Kitchen menu around seasonal produce harvested from Cloverdel’s gardens as well as quality, locally-sourced fare as required. This impressive and passionate duo will include numerous culinary techniques, including the art of making good vinaigrette, traditional polenta, braising using secondary cuts of meat and water bath baked custard.
The day begins in the Kitchen with a relaxing tea/coffee and something sweet before heading out for a property and vegetable garden tour to harvest seasonal ingredients for use in the class. Upon returning, you will meet our guest chefs who will then commence the Masterclass. The day will culminate in a relaxed lunch with matched wines. Whilst the class is primarily demonstration-based, there will be opportunities for participation, if you so wish. Guests will leave feeling full, confident and inspired, including take-home notes detailing the class’s recipes, tips, tricks and intimate chef know-how.
