Mhancha or M7ancha / The Moroccan Dessert Estival by Excellence / The Royal Cake / Moroccan Serpentine Cake / Moroccan Snake Cake / محنشة!
It is called Mhancha or M7ancha محنشة and it remains a great classic of the Moroccan pastry which one never tires, indemodable and absolutely exquisite! M'hancha is a specialty of the great imperial city and spiritual capital of Morocco Fez. It is called M'hancha because of its shape that looks like the snake. In Morocco, we say "Hanch or 7anch" حنش for a "Snake - Snake", and "M'hancha or M'7ancha" means "What takes the form of snake or serpentine". By cons in classical Arabic "Snake - Snake" is called ثعبان.
For Moroccan (s) who know very well will certainly confirm that it is a real treat for the taste buds! Mhancha is very popular in Morocco throughout the year on all occasions especially the month of Ramadan. It is prepared with Moroccan bastilla leaves, whole almonds that are prepared in the form of a fairly smooth paste and mixed with other essential ingredients such as gum arabic (Maska 7ora), cinnamon, etc. The exact measurements of ingredients are very important to succeed M'hancha.
True Mhancha, the traditional is NEVER prepared with commercial almond paste, but rather with whole natural almonds, that's what makes it so special, so distinguished, so royal and so delicious! Moreover, it must be stressed here that all the Moroccan pastry is prepared with natural almonds and never with almond paste or commercial sugar paste too sweet, having a bland taste in the mouth.
