Threw it down in the kitchen! My favorite food is crabs. My momma told me when I was in her belly, one of her favorite cravings was crabs. She says that's why I love it so much. Being that I'm from Maryland(home of the crabcakes) it was a match made in heaven. So when I was old enough, the first thing I always wanted to learn to make was crabcakes. Definitely not hard to make, but finding the perfect accessories(ingredients) to your ride(crab meat) is what make a crabcakes so special. Letting the crab shine while the others compliment it through out.
So in mine, wanted to make two different kind. One with jumbo lump crab(holy grail) and the other just the meat from the fin(wanted to play around with ingredients that I usually don't use). I tend to keep it simple. The lump has scallions, egg, bit of mayo, mustard, worcestershire, old bay and my binding combo. The fin one I added in bell pepper, hot sauce n saltine crackers. Threw in crackers in because it needed more binder. I put in a fry pan to get that nice crispy bottom n finish it off in the oven. Key to a amazing crab cake is to not overmix n packing it too tightly. Gotta let it breathe. You hear that ladies, gotta let your guys breathe. That space lol.
Of course to every entree you need your vegetables n starch. I made some lemon garlic asparagus n home fries. Yeah I guess I wants to breakfast flare in my dinner lol. So what was the 1st dish you ever made?
