Dropseting is a wonderful method to sculpt and gain muscle mass. Start heavy and drop the weight all the way down to the last plate.... 15/20/30 ....reps, whatever you end up with... but only stop when triceps are numb and impossible to move.

The hamstring are devided into four different muscles, three of which are biarticular and forth one which only crosses the knee joint . Train hammies by incorporating moves that include hip extension (stiff leg deadlifts), moves that include knee flexion (leg curls) or both at the same time. The positioning of you feet when doing leg curls is also important... outward feet for lateral hammies vs inward feet for medial hammies.
As always, while performing any exercise, focus your mind on the part of hamstrings you’d like to target and keep that mind-muscle connection every single rep! It does make a huge difference in recruiting all muscle fibers at their fullest potential.
