Crunchy Peanut Butter Cups✨ these are among my favourite quick and easy desserts to make! The recipe is below. Let me know if you give this recipe a try, or maybe tag a friend you'd like to share these with♥️
Crunchy Peanut Butter Cups
makes 5
150g raw chocolate (or any dairy free choc)
1/4 cup crunchy peanut butter (or smooth!)
1 tbsp maple syrup
tiny pinch of salt
In a bowl mix the peanut butter and maple syrup together vigorously, until the peanut butter firms up. Form into little patties a bit smaller than your moulds. Place on a tray lined with baking paper and pop them into the freezer to firm up. Meanwhile, melt the chocolate and place a spoonful of chocolate into the bottom of each mould. Place in the freezer until set. Once that's set, place the peanut butter patty in the centre. Fill the moulds with chocolate. Top with a sprinkle of chopped peanuts (optional). Place in the fridge or freezer until set. Enjoy!

Chocolate & Caramel Pie
Chocolate Almond Base
1 cup almonds
1 cup pitted dates
1 1/2 tbsp cacao powder
1 tbsp rice malt syrup
pinch of himalayan salt

Date Caramel Layer
13 pitted medjool dates
1/2 cup rice malt syrup
1/4 cup tahini/peanut butter/nut butter of choice
4 tbsp melted coconut oil
1/8 tsp sea salt
1 tbsp water

Chocolate topping
80g vegan chocolate, melted
1/4 cup peanut butter

To make the base, process the almonds into fine pieces. Add the remaining ingredients and process again to combine. Press into a lined baking sheet or container.
To make the base, soak the dates for 10-15 minutes in boiling water. Peel off the skins (as this makes a smoother caramel), and place in a high powered blender or food processor along with all the other ingredients. Blend until completely smooth. Spread over the pie base.
Mix together the melted chocolate and peanut butter until fully combined. Pour over the caramel and smooth out evenly.
Place the pie in the freezer for an hour firm up before slicing. Best kept refrigerated.

Vegan Mexican Lasagne🍴the recipe is below, let me know if you're saving it! It's packed full of vegetables and both me and my kiddies loved it! It's pretty mild so if you're looking for more of a kick add some chilli🔥I hope you're all having a great week!✨
Mexican Lasagne
1 large onion, diced
2 cloves garlic, minced
1 zucchini, sliced
3 tomatoes, sliced
Olive oil
1 pack of Funky Fields minced (@funkyfields_official) or sub 2-3 tins of brown lentils
1 tin blackbeans, drained and rinsed
1 tin diced tomatoes or 1 large tomato diced
6 green olives, sliced
2 cups passata (bottled tomato purée)
3/4 cup water
1 tsp each cumin, coriander, smoked paprika (this was very mild so suitable for kids, add more if you like it flavour packed or add chilli for a kick)
1 tsp sea salt (adjust to your taste)
2 large handfuls of spinach or kale

Vegan white sauce:
1.5 tbsp vegan butter
1.5 tbsp white flour
1.5 cups soy milk
1 tsp salt
Handful of @mylifebio Cheddar Shred
To assemble:
Instant lasagne sheets

Vegan Pancakes
serves 2
1 cup flour of choice
1 tbsp coconut sugar
1 tsp egg replacer
1 tsp baking powder
1 1/4 cup of non-dairy milk
1 tsp vanilla

Add all of the dry ingredients to a bowl and whisk to combine. Add the wet ingredients and mix together. Pour some mixture into the pan lightly greased with coconut oil. Cook for a few minutes each side on low heat.

Finally a new sweet recipe for your weekend💫strawberry swirl frozen coconut yoghurt cakes🍓they're vegan, easy and super healthy (perfect summer breakfast!). I wasn't really sure what else to call them haha but they were delicious! The kids thought they were eating ice cream cake so I was a happy mama! Happy Friday guys xx
Strawberry Swirl Frozen Coconut Yoghurt Cakes
bases
3/4 cup hazelnuts
1/2 cup medjool dates
1/2 tbsp cacao powder
tiny pinch of sea salt
dash of vanilla
Process the hazelnuts into a fine meal. Add the remaining ingredients and blend to combine. Press desired amounts into cake moulds.
Filling
@purecocobella Strawberrry Coconut Yoghurt (yep, that's it!)
Fill each mould with the coconut yoghurt. Freeze for a few hours until firm or overnight. Top with a drizzle of melted vegan chocolate, and top with fresh strawberries.
Let soften until creamy and enjoy!

On the menu tonight is healthy Rice & Chickpea Stuffed Capsicums ♥️ the recipe is below! I topped them with vegan Feta from @mylifebio - have you guys tried it yet?!🤤 it's been the inspiration for so many of our meals lately! We had a productive day at home, the kids had a loooong nap (please still sleep tonight) and I made these for dinner. Vegan Chickpea & Rice Stuffed Capsicums
1 tbsp olive oil
1 brown onion, diced
1 clove of garlic, minced
1 cup of rice
2.5 cups vegetable stock
1 tin diced tomatoes (400g)
1 tin chickpeas (400g) drained and rinsed well
2 tsp mixed herbs
1 heaped cup shredded kale
8-12 capsicums (depending on size)
fresh parsley, to serve
crumbled @mylifebio feta, to serve

In a large pot, sauté the onion and garlic until browned. Add the rice and mix to combine. Add the vegetable stock and adjust heat to a simmer. Let cook for about 12-14 mins stirring occasionally before adding the tin of diced tomatoes and the tin of chickpeas. Let cook for another 5 minutes or so. Stir through the kale. Remove from heat.
Preheat oven to 175C. Remove the tops and insides of the capricums. Fill the capsicums with the rice mixture then drizzle with olive oil. Place in the oven to bake for around 30 mins.
Top with fresh parsley and crumbled vegan feta.

A new recipe for your new week💫 I hope you love it. Vegan Thai Green Curry🌱I replaced coconut cream with coconut yoghurt in this recipe to keep it on the lighter side. Don't forget to save it for a quick and healthy weekday meal. Have a great week everyone♥️ Thai Green Curry with Coconut Yoghurt
200g tofu, in cubes
1/2 a red onion, sliced
oil of choice, I like using coconut oil
6 small potatoes, in cubes
1 head of broccoli, in florets
1/2 a cauliflower, in florets
6 tbsp vegan thai green curry paste
3/4 cup @purecocobella Natural Coconut Yoghurt
Extra water, as needed
Quinoa or rice, to serve
Fry the tofu and red onion in a drizzle of oil in a fry pan. In a sauce pan, add the potato and add enough water to only just cover. Simmer until almost fork tender. Then add the broccoli, cauliflower, curry paste and as much water as you like (just depends if you like a saucier curry). Cook for around 5 mins. Add the tofu and onion then stir through the coconut yoghurt. Serve immediately, here I served it with quinoa and a dollop of coconut yoghurt. Enjoy!

Today was just such a good day. I'm off to bed with a full heart. A quick play on the beach (swipe for a photo in the exact spot when Flynn was Lylas current age, with a little Lyla in my tummy😭only about 18 months ago). We then headed to @grilldburgers for vegan cheeseburgers which were amazing
aaand then vegan ice cream at @benandjerrysoz (pb & cookies alwaaays)🍦 ...
and we could CHOOSE between burritos, nachos, pizza, burgers, ice cream, churros... there's probably more options we didn't even think of.
Veganism is SO recognised/catered for these days. 6 years ago it was chips and salad and if you mentioned the v-word people would look at you blatantly puzzled. I am just soooo happy and grateful because my kids, they will have OPTIONS and they will not miss out on any of the fun "experiences" during their childhood, or for the rest of their lives🤞🏼🌱🌏
It just kind of hit me I was watching Flynn enjoy his scoop of dairy free, cruelty free icecream. It felt damn good. So thankful.
I also just have these moments of overwhelming gratitude to be able to do these things. Even driving home from the beach a few days ago, I just had this moment of wooo I can drive! I have movement in my right ankle! I can walk, I can take my kids to the beach or where ever I want.
It's just gone 6 months since I was cleared after the two fractures and ligament tears in my ankle. It really changed my perspective. It was SO challenging, I don't know how I got through some of the days with two kids when I couldn't really take care of myself hahaha, I guess you just manage. It has made simple things seem so beautiful and easy. Honestly it still swells and I still have pain (and I drive Haydn nuts with my complaining). In the past I would have picked myself apart looking at this photo. However, I am just so happy. So happy to be healthy, able to walk, able to breathe. And most of all, happy to be the one they call Mama (and wife!)♥️

Oh heyyy there👋🏼I hope you're all well. It's been a minute since I posted, but we survived getting married!! We actually had a blast getting hitched. As soon as we get our photos from our amazing photographer @spencerguyandco I'll share more details of everything 😍 all the stress/busy-ness of wedding planning has been lifted and we are settling nicely into life as the Thomson's👨‍👩‍👧‍👦
This was my lunch today, which you may have seen on my stories.
We have kale, spinach, healthier & vegan potato bake, pan toasted chickpeas, broccoli, quinoa, topped with @pimp.my.salad hemp parmesan and spiced sunflower seeds🍃♥️
To make the chickpeas, just add in a pan👇🏼
1 tsp oil
1 tin chickpeas, drained and rinsed
1/2 tsp smoked paprika
1 tsp sumac
generous pinch of salt
tiny squeeze of lemon
Then just cook on medium heat turning often for about 5-7 minutes until browned. Some will pop around as the moisture cooks out. Enjoy!

We had a delicious lunch at @rawkitchenfreo today, it was sooo good, finished off with a touch of shopping at their store @zerostore.au. I could spend hours in there 😍
All my brain thinks of at the moment is wedding, wedding and wedding so I haven't been in the kitchen at all! I'm super excited for the day but looking forward to sharing pics, telling you guys all about it & creating yummy treats again 😍
