Continuing my posts on my trip to Oaxaca a while back, this is photo of the well at Tio Rey's mezcal distillery in Sol de Vega, Oaxaca. Water from this well is siphoned off to the clay stills just on the inside of the walls, and is used to cool the metal bowls used to condense alcohol vapors that are then collected and bottled. There's no fancy pumps, electric levers and gauges, no fancy condensing coils. Just the basics of alcohol distillation and generations of passed down knowledge of doing it right.

This is about as artisanal as it gets. Pictured above are 5 of Tio Rey’s clay stills. The stills are wood fired from below, with the pulque (or fermented agave juice) being filled underneath the pictured removable clay vessels. The seam is sealed with agave fibers, much like the seal on the metal hat turned upside down that acts as a condenser. As the alcohol from the pulque evaporates, it condenses on the metal hat that’s cooled with running water being siphoned off the well in the background. The mezcal vapors drip down the hat and fall upon an agave frond that feeds into the bamboo shoot jutting out of the clay walls before rolling into jugs below- drop by drop. It’s a tedious process that combines science with an art and understanding of mezcal that has been passed down for generations at this palenque. It’s a very awe-inspiring moment gently juxtaposed with the sound of running water and the smile brought around by a few gracious pours of mezcal. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

There’s something amazing about mezcaleros. (and I’m not just talking about their mezcals.) There’s a tangible component of mezcal that you can taste when you drink it, something capable of transporting you to a time and place. Every time I get to introduce someone to mezcal, I remember sitting right next to this man. I had met Tio Rey on his first trip to the United States. I had been a part of a small group of bartenders that were able to sit in an intimate setting with some of the best mezcaleros around- some of them meeting for the first time. And now, I had found myself being welcomed by him, at his home, with his family, at his palenque, with his mezcal. He hadn’t slept much that night because he had kept the wood fired stills going through the night, but he had his hammock readily available that he napped on and tucked away in the background. After a few hours of touring his property, we pulled the hammocks down, filled our jicaras with mezcal and listened to him talk about life as a mezcalero. It was a good day. •

Here we have our Tejuíno con Elote a cocktail representing traditional street fare from Mexico. Ingredients include corn masa, piloncillo sugar, fresh lime and a splash of Topo Chico. In addition, we are strengthening the Tejuíno with Mezcal Vago Elote where Aquilino Garcia Lopez infuses his espadin mezcal with roasted sweet corn for a week and then distills it for a third time.
