I felt like this Monday morning could use some super extra breakfast TACOS 🌮💃 scrambled eggs, @kitehillfoods chive cream cheese, @pedersonsfarms breakfast sausage, avocado, @clekraut red beet kraut, hot sauce, and @traderjoes everything bagel seasoning on @sietefoods cassava tortillas (I like to toast them over an open flame on my gas stove to get em crispy)! I set my alarm to wake up before the kids this morning to knock out some emails, workout, and enjoy coffee in peace. Now I’m ready to take on the day! Such a game changer. It was a Sunday well spent in one of my favorite places... the kitchen 😊 I made 4 recipes from my blog for a friend who just had back surgery. Now she and her fam will have some wholesome real food meals for the week (plus some!) 🙌 I was given complete menu freedom, so I chose 4 of my personal faves: Whole30 Shrimp & “Grits”, BLT Egg Cups, Sheet Pan Chicken Fajitas, and Tuscan Spaghetti Squash Casserole. 😍 They all hold up well in the fridge and are super easy to reheat for a quick meal. This Paleo Irish Soda Bread is so good even Liam couldn’t keep his hands off of it 😂 I made this recipe from @elanaspantry for a St. Paddy’s Party tonight, and it’s so easy and DELISH! My mom used to made Irish Soda Bread every year, so I’m excited to continue the tradition with a version I can actually enjoy. Happy Friday, guys! Continuing on with the Irish-inspired meals with this easy SKILLET SHEPHERD’S PIE 🤤 This is one of my favorite recipes on the blog. Beef, carrots, onions, and peppers are sautéed in a savory gravy, topped with a “buttery” cauliflower mash, and baked to perfection. It’s also #whole30, #paleo, and #keto friendly! Feel free to sub in the mashed potatoes from yesterday’s post if you’d prefer those over cauliflower. About last night’s dinner (that was also today’s lunch) 😍 The best oven-roasted chicken (posted a tutorial in my stories today!) + creamy #dairyfree roasted garlic mashed potatoes with pan gravy + green beans. INGREDIENTS:
2 lbs white/russet potatoes
1 tbsp ghee
1/4 cup unsweetened almond milk
1 tsp sea salt (more to taste)
2 cloves roasted garlic (I just roasted a whole bunch with the chicken for the last 30 mins!)

DIRECTIONS:
Peel, cut, and boil potatoes until fork-tender. Drain and add remaining ingredients. Use an immersion blender to whip ‘em up until they’re nice and creamy.

For the gravy, I just added a tsp of arrowroot powder mixed with 1 tbsp water (called a slurry) into the pan of chicken drippings with 1 cup of chicken broth. Brought to a boil while whisking then simmered for a few mins!

✨ New Recipe ✨ Instant Pot Chicken Broccoli “Rice” Casserole! 🥘 This #dairyfree, #nobake, #easypeasy dinner comes together in less than 20 minutes. It reminds me a lot of the cream of mushroom soup version my mom used to make when I was growing up! I’ve included a #paleo and #keto version made with cauliflower rice, as well as a regular version made with white rice for #allthecarbs 😍 @kitehillfoods almond milk cream cheese is the not-so-secret ingredient which makes this super creamy and oh-so satisfying! Slow Cooker CORNED BEEF & CABBAGE is up on the blog today! I grew up eating this meal every year and I loveeee it! In the spirit of St. Patrick’s Day week, I’ll be sharing some fun green and Irish-inspired meals! This Paleo PISTACHIO PUDDING is a delicious healthy dessert - it’s only sweetened with real maple syrup, and it’s made with spinach & avocado! my kids had no idea (and I promise you won’t either) = #winning 😊 Growing up, my mom always used to make a green cake for St. Pat’s dessert using the Jello pistachio pudding mix. Lunch 😍 @feelgoodfoods gluten free chicken pot stickers over greens with a side of @clekraut beet red kraut and coconut aminos for dipping! These pot stickers are hands down one of my favorite quick #foodfreedom meals. They legit taste like the real thing but they are certified GF and #dairyfree, too 🙌 a serving size is 1/2 the package but I always eat the whole thing 😂🤷‍♀️ We’re getting ready to head to Baltimore for a little overnight getaway and I am so excited!! ✨ have a good weekend!
