Nostalgia: one of my favorite Russian dishes is a combination of boiled potatoes and sautéed mushrooms with onions. Today I elevated and simplified it by roasting potatoes and mushrooms for 30 min at 450F drizzled with olive oil and seasoned with salt and pepper. Served with sunflower oil, raw white onion and fresh parsley with a side of pickles and marinated tomatoes.
Sometimes I pretend I live in a flower shop. Always surround yourself with beauty and always find beauty in little things such as a bouquet of parsley or a found nest. Happy Sunday!
