So here is a recipe that I’ve been cooking for years - and one of @raminkarimloo favourites! It’s my tofu, lentil and chick pea curry! A great recipe for all to enjoy especially if you are vegan! We are not vegan but enjoy this meal for a healthy alternative. Reason I add tofu is for the protein content. This is so very important for us all and even more so should you be vegan. Protein is a MUST! And not just from pulses and beans! So, here we go with the recipe!
1 onion, tofu, coriander - sauté in a little spray oil.
Add 2-3 tablespoons of curry paste and stir in.
Add 1 can chopped tomatoes, 1 cup red lentils, then bring to boil. Slowly add water as lentils thicken and then add a can of chick peas. Still adding water as and when necessary.
