Who doesn't like tamales ?! I mean tamales are delicious & great to eat this time of the year. With the cold weather and all tamales & some champurrado (Mexican hot chocolate) will be very good ! Almost every Mexican family makes tamales for Christmas I know my family will be making them for Christmas this year lol . I don't really have a story to tell about tamales but if you love them & want to learn how to make them yourself I have a very simple recipe to make them they do take a while to make . Ingredients 1)masa de tamales (i don't make my tamale dough I buy it from rancho San Miguel) 2)1 1/4 lbs of pork 3)large onion 4)1garlic clove 5) four dried california chilipods 6)2cups of water 7)1 1/2 tsp salt 8) corn husks DIRECTIONS . 1) first I put the corn husks to soak in a big bowl of hot water so they can separate & soften up . 2)put the pork into a Dutch oven with the onion & the garlic clove add water to it & cover it put it to boil & lower the heat to medium low . Let it sit for about two hours . 3)now you can get the chili pods & remove the seeds & the stems from all of them once you're done removing all that you can out them in a sauce pan filled with two cups of water and let it sit for 20mins after 20mins have passed remove from heat & let it cool . 4)after you let them cool for a while put the chilis along with the same water you used in the saucepan in a blender & blend it till it's smooth . Strain the mixture add some salt and put it aside 5)(you might want to use rubber gloves for this step) shred the cooked meat and mix it with the sauce you blended 6)now you can grab the corn husks & spread the corn dough over a single husks and add meat in the center (make sure not to add too much meat because it will be a mess when you TRY and wrap the tamale) 7)fold the sides toward the center and place in a steamer with the opened side up . Cover them with the leftover corn husks & a plastic bag & let them steam for about 1hr 30mins 8) now the tamales are ready . CAUTIOUS‼️ HOT ❗️ lol be careful when you take the lid off the pot you can burn yourself . Anyway now the tamales are ready to eat you can add Sourcream and salsa 😋
