At Lune, no part of the croissant making process is “just because”. We don’t do anything just because a recipe says to, or just because that’s the traditional way to make croissants. Every part of the process has been thought out and created, developed, improved or applied because it achieves the exact desired finished product.
Our techniques are unorthodox, unique, and certainly not traditional. They are therefore constantly open to incremental improvement, which is why we’re not standing still, why we are always striving to make sure that the croissants we bake every day are the best we possibly can, based on learnings, experimentation, acquired knowledge and a deeper understanding of our product.
