  💕Mumma of two & one on the way 👶🏻 cooking nutritious meals for my little foodie family 👨‍👩‍👧‍👦 💕 📍Milton Keynes

Sweet girly time with this cutie is always a good time 💞 we are taking a break in centre parcs this week - staying closer to home now bump is getting bigger 🤰🏼 !! Having so much fun already! 💕

Lovely wkend away in France with the girls (& bump 🤰🏼!) why can't we have pretty pink walls like this at home to pose against 😂💕

We love Viennese whirls - they are so yummy & melt in the mouth 😍 if you fancy a spot of baking today (good for kids to make too!) I've added the recipe below 💕

250g v soft butter
250g plain flour
50g cornflour
50g sifted icing sugar
1 Tsp vanilla paste (or extract) •Preheat the oven to 190C or Gas mark 5
•Line a baking sheet with greaseproof paper.
•Pop the butter, plain flour, cornflour, icing sugar & vanilla paste in a mixer and blend until smooth. •Spoon the mixture into a piping bag fitted with a 2D nozzle. •Pipe rosettes of the dough, spacing well apart.
• You can put them in the fridge at this stage for 15 mins to try and hold their shape better if not they will still look good ☺
•Bake for about 15 minutes or until pale golden-brown and firm. •Cool on the baking tray
For the buttercream filling I use the following:
100g softened butter
150g sifted icing sugar(or extra to taste if you like your buttercream v sweet!)
1/2 tsp vanilla paste (or extract)
•Put the butter & icing sugar into your mixer (or a bowl) Add the vanilla paste and whisk until very light and smooth - I normally do this for at least 5 mins!
Spoon into a piping bag with a 2D nozzle.
•Pipe buttercream icing onto half of the cooled biscuits •Spoon a little jam of your choice & sandwich with another biscuit •Dust with icing sugar & tuck in! 💕

Saturday morning pancakes - these are so easy to make and big hit with the kids as well! 💕

2 eggs
15g oats
Ground vanilla bean
Tbl cottage cheese
1/2 banana -Whisk together eggs & cottage cheese. Stir in the oats, banana & grind some vanilla into the mixture -fry in a little coconut oil for a minute each side
-top with some yoghurt & fruit of your choice

I made almond milk today for the 1st time - can't believe how easy it was! I used 100g almonds soaked them overnight in water, then whizzed them in the food processor with 500ml water & a tsp vanilla paste - delicious 💕 #fuelyourfamily

Loving chestnut mushrooms at the moment! They are packed with vitamin D & I much prefer the taste compared with white mushrooms. I fried mine with a little coconut oil, then added a tbsp Philadelphia cream cheese (garlic & herb) served with seeded toast, rocket & chives 👌🏻

Such a good late lunch! Paprika Cauli rice with @heckfooduk chicken sausages, prawns & veg 👌🏻

Loving cauliflower rice at the moment - was so delicious with this harrisa chicken & pomegranate seeds - from @clean_eating_alice cookbook 👌🏻

This delicious plate of goodness was ready in 10 mins! Spicy pork & mushroom zoodles - flavoured with paprika & soy sauce & topped with chillis & coriander - perfect lunch 👌🏻

Hiit session followed by a delicious paprika turkey wrap - this is just before I rolled it 😃 filled with salad, gherkins, mustard & @fage_uk yoghurt 💪🏻

The yummiest sandwiches from afternoon tea earlier - that cucumber and basil one 👌🏻
