Who else has been using the Fathead Pizza crust recipe to make low carb Keto bagels? I know I'm not the only one. Lol. ..
1 1/2 C shredded mozzarella
2 oz cream cheese
1 large egg
1 1/4 cup almond flour
1 T oat fiber (or 2 T whey protein powder or 1/4 cup more almond flour)
3/4 t. baking soda (or 1 T baking powder)
Melt cheeses in the microwave. Put in food processor with egg and mix thoroughly. Add dry ingredients and take for a spin until completely incorporated. Wrap in plastic and put in freezer while oven heats (400 F). Divide dough (it's super sticky!) into 6 portions. Oil hands and roll into snakes. Seal ends together and place on parchment lined baking sheet. Bake for 12-15 minutes. Let cool and enjoy. (If your bagels turn out a little flat, add a little more almond flour.) Enjoy!
