Fried sweetbreads, morels, and lardon bread. Isterband sausage and fermented cabbage on a rye cracker (basically a Reuben). Venison, endive, and sorrel in marrow sauce. Goat cheese and nettles with goat cheese ice cream and nettle ice cream. Celery sorbet and juniper foam. Arctic bird's nest with hidden raspberry sorbet. Macaron, eclair, hibiscus salted caramel, and chocolates with green tea ganache. Takeaway rhubarb scone for breakfast.

Crab and dill tart, beef tartare leaf, caviar pancake. Vegetable and pork belly broth with blood pudding ball. Caviar and white asparagus. Fig and cardamom aquavit. 7x wagyu beef with sunchoke purée. King crab with green strawberry. Hickory smoke foie gras ice cream with blackberry ribbons. Hot smoked Norwegian salmon tart with pea shoots. Halibut with kohlrabi and sea lettuce in nasturtium sauce. Lingonberry kombucha.

Beginning of the night with the Milk Punch at Aquavit.. tasted almost like cider with a kick of bitterness towards the end of the palate - the pineapple chip with marshmallow meringue is an elegant display.
