Fried sweetbreads, morels, and lardon bread. Isterband sausage and fermented cabbage on a rye cracker (basically a Reuben). Venison, endive, and sorrel in marrow sauce. Goat cheese and nettles with goat cheese ice cream and nettle ice cream. Celery sorbet and juniper foam. Arctic bird's nest with hidden raspberry sorbet. Macaron, eclair, hibiscus salted caramel, and chocolates with green tea ganache. Takeaway rhubarb scone for breakfast.
