Last year I had an unforgettable strawberry and burrata dish at Arpège, and this year, strawberries again but with a completely different look. Besides fresh sweet strawberries (so so good), there were scallions, garlic, radish, leek, olives, feta, olive oil, balsamic and so good balsamic and edible flowers. Everything was fresh, looking so simple but so good!! How many people can manage to make a savory strawberry dish and make it so darn good? Totally the kind of thing that blows my mind

The signature tartlettes as amuse bouche, you see the purees made with different types of seasonal veggies, fruits and herbs? They were essentially the purees we had at the garden. In the restaurant the experience was different because a lot of the labor and time intensive details can be achieved here with an entire kitchen team (see pic 2). The sophistication and details are another kind of enjoyment when it comes to French cooking

Pic 3 was the assortment in early winter, came in such different flavor profiles. Smoked beetroot and carrot, sweet potato and tomato caviars. I am sorry. The game is over.

Normally if you go to Arpège they will give you one slice of bread (of course you can refill) and butter on the side. But for @gros_mangeur and me it came in half a loaf 😂 mostly because we always needed a lot of bread to wipe up every drop of the sauce 😆

The day before visiting Chef Alain Passard's private garden, I was at his restaurant for lunch. I remember the first time I visited his garden in July 2015, I also went to Arpege 2 times in the same trip. Would eating Alain's food 2 or 3 times too much in a trip? For me, absolutely not, in fact, each time was different, especially when it came to the restaurant vs garden. In fact I wish I could come every other day when I was in Paris.

I did not plan this lunch beforehand as I thought Alain might not be in the restaurant that day in preparation for OAD Day 3 dinner which was the announcement of the top 100+ European restaurant. But when I met Chef Alain at Day 1 event, he told me he would be working and said come over and he would cook me a special meal 😍😍😍 of course! That's a date! 😆

A chef can appear like a rock star, talk like he / she can save the universe; you could have watched him on netflix, interviewed him for 5 hours, or even followed him for a whole week. But in the end, if you have not eaten his / her food, I don't think you can claim you know a chef. Because it is the food that cannot lie. The food will tell you his skill, likely show his background and training, his culinary style and taste, his aesthetic direction, and most importantly, if he cooks with heart and soul. That part, the food is the most honest proof.

This is why I love Chef Alain's food. It is so simple, direct, unpretentious, with no unnecessary manipulation. He knows the ingredients and he cooks with such skills and precision, original and authentic. It's his way of cooking, uniquely his own style, elegant and aesthetic, no one has done it like him before, no one can do it like him after.

In this particular garden meal, his food tells us his story. For people like me who started having Alain's food late as being more vegetable-centric, this experience allowed us to see a more complete Alain, up close and personal. He is not just a master of cooking vegetables, he is the best rôtisseur, which actually was what he was known for before he gave up on meat and focused on vegetables and greens.

When you are the best of something and you decide to give it up and change to a new direction, that takes so much courage, to take up the new challenge, to walk out of your comfort zone. To think about it, this is what Noma is doing now.

I have lots and lots of respect to Chef Alain. He has unfairly and fairly taken up several spots on my list of best meals ever tried in my life. And most certainly the god of french cooking in my mind.

So glad I could take a portrait of the whole team working at the garden that day before we left, because I want give them my deepest gratitude. I did not get all their names but thank you so much Louise, Alex, Alexis, Renaud David, and everyone else for all your work, time and fabulous jobs!

It's so refreshing to see young people (ok I sound so old 😅) to be so professional, so competent, so efficient, so energetic, so passionate, and appeared truly enjoying themselves when they are working. I so love countries that celebrate and encourage young people to pursue their passion seriously. If these young cooks continue to work hard, one day we may be visiting their own restaurants, and they may be on OAD best new list! #notacommercial 🤣

Finally, at 7:30pm, it was time to leave. The sun was still quite bright outside, but we knew we had people who missed their flight and train to return home and late for dinner reservations 😅😅😅, but no one wanted to miss a thing. Because magic does not happen every day, and when it happens, you want to experience every second of it.

This might be a surreal experience for all of us but it certainly required a lot of hard work and contribution from this team. They too had been working since early in the morning, may be even earlier than Chef Alain to pick all the vegetables, fruits and herbs in the garden. It has been a long day!
