At 8 pm a new generation of young buck bartenders are going to flex their guns in front of me and some other crusty, salty, bar dudes. Truth is I will only be judging their taste in music and how many baby birds they can receive.

Tom joined me in June of last year to help open a restaurant with hopes of exciting a community of drinkers that was completely foreign to us. The thought of building a serious cocktail bar in a massive space was frightening, but Tom remained my right hand in sculpting a program and nurturing what has become the most talented and dedicated bar crew I have ever been a part of. I have watched him grow as a leader and captain of our bar, commanding the respect and admiration of our team while captivating our guests. I am forever grateful to him and even more proud because Campfire wouldn't be what it is without him. However, tonight we bid Tom farewell as he prepares to step foot on another trail. I will leave him responsible to tell you all what his future holds, all I know is that it is bright, and acidic. Come say Buongiorno and ask him about prosciutto. Arrivederci, Tommy Gorlomi. ALLORA!

After feeling beaten and bored by the industry that fueled my imagination and all my waking thoughts, my inspiration was restored by my chef, @_bachelier_ and his squad @campfirerestaurant. His incessant talk about fire, wood, smoke, coal and embers was backed by his deliberation of technique, composition, and subtlety. He respects the seasons and its ingredients as his master. Most important to me, he taught me that translation to the bar and the completely blurred line between two cultures that I now know are more similar than different. With that said, the chef and team that has inspired me is looking to grow.
