I was gonna make pancakes but I wussed out at the last minute. Like I always seem to do.
And made this instead -- because apparently this is easier than pancakes?
I don't even question my failing logic anymore, honestly.

There hasn't been much to post lately as I've just been in the process of looking after myself through some tiring work, but last week I was officially discharged from the Eating Disorders Services! Can you believe it?

It's been a long time coming, with years of being in and out of treatment, and now I'm a free elf.

My journey is far from over, but I've never felt more happy or confident in myself and my abilities or where I'm headed.
And where I want to be.
It's been a truly eye-opening experience and a tough course of learning about myself and what was most important to me.
I'm so thankful to be where I am now.

It's getting warmer which probably means I get to eat more nicecream without feeling like my limbs might fall off.
I gave the tri-colour a go again this morning with acai powder for the pink/purple, it's just pretty ~

I gave making seitan a go and whether or not I did it "right" doesn't matter because, hey, it tastes great for a first-time try!
I'll definitely be experimenting with seasons when I make this again, it's taken me almost a year to actually open up the box of vital wheat gluten to give it a go.

Monday Morning Mermaid Toast

Good morning everyone!
I really had a lot of fun with this, it just looks so pretty - I mean, c'mon, edible glitter!
I was surprised with how easy this was to actually put together too, the glitter isn't a must but I had it lying around and thought this was a perfect opportunity to use it.
It just adds to that magical feel, just what you need at the beginning of the week.

It's made with @bioglanuk's tropical spirulina and vegan cream cheese on slices of mixed seed wholemeal toast.

I had a go at trying to create "mermaid" nicecream instead of "mermaid toast" this morning, although I will be having a dabble with that soon too.
Looks aren't everything, I guess?
My time management skills - or lack there of - certainly played against me this morning but it's what's on the inside (the taste) that counts, right?

I've been having a lot of issues with serious fatigue lately, hence my sporadic updating, but all is well, I can assure you!
I should have some very exciting news to share in the next month or two, so keep your eyes peeled for that ;)

It's coming to the weather where I don't feel obliged to eat oatmeal in the mornings but I've found that it is very much my go-to comfort food.

I don't really go into things anymore but treatment has been awful lately; one thing that has always irritated me about the standard of care in my area is that you're going to be lumped into a one-size-fits-all treatment plan.
It really doesn't seem to matter if you've had issues for 2 years or 20. Which I find ridiculous, as I'm sure most people would.

I understand funding constraints, I understand the red tape, but I don't understand why, after explaining again and again, why bringing up trauma without due action and telling someone to just 'distance yourself, you're not there anymore,' is supposed to be helpful.
It's not. And unless you address that, it's not going to work out as planned.

But otherwise I really can't complain; the weather is great, spring cleaning is... steadily getting there (haha!) and future plans are coming together, slowly but surely.

I'm enjoying this springtime weather so much, for once! There's a slight chill to the air but the sun is glorious ~
I can't wait to spend more time in the garden this year, there was way too much going on last year that I never really got the chance to enjoy it.

Enjoying some of @merchantgourmet's Mexican-Style Mixed Grains with homemade sweet photo falafel patties and salad.
I am such a wimp when it comes to spice - even though I love it, go figure - my tolerance is really low, so I was worried about this setting my mouth on fire.
Thankfully, not the case, so I'd definitely have these again because I'm too unimaginative when it comes to mixing rice and stuff with spices. I just throw things in and hope for the best.

Taking some time out to work on my journal spread for April as I've taken a keen interest in a very abstract way of putting together bullet journaling and art journaling in a way that keeps me motivated and interested in writing on a regular basis.
Besides, journaling should always be as unique as you are!
I'm also really looking forward to trying out these new @merchantgourmet goodies from @tastepr; time for my head to get back in the kitchen to see what I can come up with!
