Sushi sandwich 🍙 anyone?😋 Have you ever tried “Onigirazu”? 🥪
It was my first time ever and it’s already one of my favourite foods😍🙌🏼 I made enough for 2 days and had them the next day for lunch at uni. Much tastier and juicier than bread sandwiches. 👍🏼🥪♥️

RECIPE:
300g sushi rice
200g tempeh
2 Tbs rice vinegar
3 Tbs coconut blossom sirup
Lemon juice
Beetroot
Carrot
Nori sheets
Cilantro
Cucumber
Other ingredients you like
Sticky peanut sauce (exact recipe is in my ebook as part of the “summer rolls” recipe)

Cook sushi rice according to instructions, then mix in 2 Tbs rice vinegar and 3 Tbs coconut blossom sirup.
Grate the carrot and mix it with some lemon juice to avoid oxidation. Grate the beetroot and mix it with 1 Tbs lemon juice and 1 Tbs coconut blossom sirup.
Cut cucumber as you wish. (I like thin strips)
Fry tempeh in some coconut oil and put aside.
Place some rice on a nori sheet, then layer with cilantro, tempeh, sticky peanut sauce, beet “slaw”, carrot and cucumber. Finally, place some more rice on top.
Wrap the sides around and cover in cling foil for a few minutes. Cut the sandwich into 2 parts, remove cling foil and serve with sriracha mayo and black cumin (or sesame seeds). 🖤

👉🏼 What do you think of the new Instagram tools? Now you can “mute” people if you don’t want to see their posts and/or stories. I think it’s handy because I follow some accounts only for their stories 😃 (e.g. meat eaters who I’m friends with who post meat pictures all the time😂)

Happy official beginning of summer!☀️ It doesn’t feel like summer at all here in Düsseldorf - it’s windy and cold. 💨❄️🤔 but I’m going for a short run anyways. 😍 I always run 3-5km very slowly so that I can still breathe and talk - all forms of extreme exercise bring your body more harm than benefits. The ideal exercise (according to qi gong and studies) raises your heartbeat but still enables you to talk normally.🗯 That’s why I always recommend walking! Everybody can do it and it’s so easy to integrate it into your daily routine. 😊 Depending on your body weight and age, it might already be your ideal form of exercise. Since I’m young and fit 😆, I prefer slow running. I always feel so good afterwards!😍🌟💥 What’s your favourite cardio exercise at the moment?🚴🏻‍♂️🏊🏻‍♂️🏃🏽‍♀️

It’s 🍓 season so I’m eating strawberries every day at the moment. 😍 This month I’ve been spending much more money on fruit than usual because it’s so worth it to me. 🍑👍🏼 In my opinion, Germans are often too greedy when it comes to high quality food, which is a silly approach. I’d rather pay the farmer👨🏻‍🌾 now than the doctor👩🏻‍⚕️ later. Do you agree? 😊 I don’t track my spendings but I’d say I spend about ~25€ per week on fresh fruit and veggies. 🥒🍒🍉🍠. .

RECIPE for gluten-free buckwheat crepes 👉🏼 on my blog already 📲🥞

Für diese Crêpes habe ich ein bisschen mit den verschiedenen glutenfreien Mehlsorten von @govindanatur herumgespielt. Dieses Mal habe ich Buchweizen mit Amaranth und etwas Tapiokamehl (zum zusammenhalten) gemixt. Als Topping verwende ich rohen, gekeimten Buchweizen, der übrigens viel besser schmeckt als der normale - er ist softer und eignet sich besser zum so essen. Ich LIEBE ihn auch auf Smoothie Bowls. 💖 Bei Govinda findet ihr vielen Rohkost- und Superfood-Produkte. Jeden Monat zeige ich euch in meinen Stories was ich so bestelle. 😊 Meine Favoriten sind: Die Snack-Kugeln, Safran-Laddu, Maca, Rohkost-Kakaopulver und meine Neuentdeckung: weiße Chiasamen. 😍✨.

Today I will just relax at home & work in the kitchen & on my laptop all day. It’s a regular work day for me because I’m self-employed.🤷🏻‍♀️ I’m so sore from yesterday I can’t really move so it’s perfect! 😃 .

Kennt ihr schon die glutenfreien Müslis von @verivalbio ? 🍒 Ich habe die 3 Sorten „Bio Bircher Porridge“, „Bio Cranberry-Kirsch Müsli“ und „Bio Kokos-Marille Müsli“ getestet wobei letzterer mein Favorit war. 😍👍🏼 Die schmecken auch herrlich als Overnight Oats - also einfach 120g Müsli mit einem Glas Pflanzenmilch (circa 250 ml) übergießen und über Nacht ziehen lassen. Ich nehme es dann im Gläschen mit in die Uni zusammen mit frischem Obst als Toppings.👍🏼😋 Und was nehmt ihr so am liebsten mit in die Uni / Schule / Arbeit? 🍌 .

Heute ist bei mir übrigens Arbeit angesagt. Sonntag ist für mich ein ganz normaler Arbeitstag, wenn auch nicht ganz so ein langer. Erst mal wird gebruncht und dann setz ich mich vor meinen Laptop. 💻 Bei dem Wetter☁️ und nach all der sportlichen Betätigung gestern (4000 kcal🔥😱) kann ich mich nicht beschweren. 👩🏻‍💻👍🏼

@kris_the_cat & me are on our way to Cologne to spend the day at @wanderlustdach where we’ll be doing lots of yoga, running, feasting, and enjoying quality time with like-minded souls. It’s a “mindfulness marathon” including meditation as a part of the festival. So cool! 🕉🧘🏻‍♀️☯️ We will start with a 5km run, then there are yoga courses all day and in the afternoon is a meditation session for everyone. Check our stories today for some mindfulness vibes.💫

Today I skipped class to catch up with work and uni assignments. This semester is so packed! 😱 .

Someone recently asked me how to find something you love. .
👉🏼 How do you find out what is YOUR passion? We all want to spend our lives doing the things we love. Life is about outgrowing yourself and constantly evolving, so challenges are also part of it. If you have the dream to become a doctor, you’ll have to study intensely before you can call yourself a doctor. And once you exert your dream profession, you might realise it’s not what you wanted and wish to change your profession. Maybe you don’t want to work at all or you have so many hobbies and passions that you would love to combine it all. YOU are the one pulling the strings in your life. So ask yourself: .
👉🏼 What do you truly enjoy? What makes you really happy? Write down a list of things that have made you happy in the last 2 weeks.💫
👉🏼 What is your favourite place? Where do you feel the most alive / the happiest? 🌳
👉🏼 Do you enjoy company or do you prefer solving problems on your own? 💻
👉🏼 Where do you see yourself in 10 years? Who do you admire? Who would you like to switch places with and why?✨
👉🏼 What are you willing to invest in achieving your goals? What drives you? 🔥
These are just a few things you could think about and reconsider regularly. I write down my achievements every week. It helps me to keep track of my progress and motivates me to continue.🚀 And most importantly: I have a long-term vision.💭 The exact place and activities are undefined but I know how I want to feel and what energy I want to attract. ⚡️ And my future vision clearly includes lots of avocado toast. 👍🏼

❣️ Ihr bekommt eine 6-Monatige Sperrfrist wenn ihr in den letzten 4 Monaten in einem Malaria-gefährdeten Land wart (z.B. Indonesien). 🌎
❣️ Ebenso bekommt ihr eine Sperre, wenn ihr euch in den letzten 4 Monaten tätowieren oder piercen lassen habt. 💍

Happy hump day 🍉 it’s a perfect day for a mid-weekend brunch 😄🥞🍓🍌 Check out the lovely @linalemondrop whom I made these waffles with. Her graphic design inspired photography style is very unique. 👍🏼💖

👉🏼 PRODUCTIVITY is something I often struggle with because I get distracted easily. What has helped me: assign minutes to your tasks and write a schedule. Make appointments with yourself. When an appointment begins, make sure to remove all potential distractors from your working space. Enjoy full focus on the task until its time is over. You will need as much time as you assign for the task. If follow-up tasks arise, delegate new time slots to them the next day. 📝

During my master’s studies I’ve already learned more about time management than marketing. 😂 Being a full-time student and self-employed feels like leading two lives at once sometimes. 😅 Can anyone relate? Do you have any magical routine hacks to share? 😊💖

Right now I’m at the gym for a lower body & HIIT workout.
