Here’s what you’ll need:
1/2 cup almond butter
1/2 cup cocoa powder
1/4 cup maple syrup
1/2 cup coconut oil
1/3 cup almonds
1/2 cup freeze dried raspberries (or sub with dried cranberries)

Here’s what you’ll do:
1. Preheat oven to 350F.
2. Place almonds on a baking tray and bake in oven for 7-10min, or until browned. Set off to the side.
3. Line a baking loaf with parchment.
4. In a blender combine almond butter, cocoa powder, maple syrup, & melted coconut oil and blend for 2-3min until well combined.
5. Roughly chop the roasted almonds, & pour into the chocolate batter.
6. Pour the chocolate batter in the baking tin. Use a spatula or spoon to smooth the top surface.
7. Place in freezer for 30min to fully harden. Continue to store in the fridge or freezer.

Happy Wednesday #weeklyrecipe Loves 💙 Enjoy these totally #vegan and #glutenfree Cinnamon Coconut Sugar Donuts courtesy of @sugaredcoconut 🍩🤗🍩

Here’s what you’ll need:
*For donuts*
2 cups brown rice flour
1-1/4 cup unsweetened coconut milk
1/2 cup + 2 tbsp coconut sugar
1/2 cup melted coconut oil or olive oil
1/4 cup unsweetened apple sauce
2 tbsp unsweetened coconut yogurt
1 tbsp vanilla
1 tbsp cinnamon
1 tbsp raw apple cider vinegar
1 tbsp baking powder
2 tsp baking soda
.
*For icing*
1/2 cup icing sugar
1 tbsp coconut sugar
1/2 cup coconut cream
1 tsp vanilla
1-1/2 tsp blue spirulina
A handful of sprinkles
.
Here’s what you’ll do:
*For donuts*
1. Preheat oven to 350 degrees.
2. Lightly grease a donut baking pan.
3. In a large mixing bowl, mix in coconut milk, apple cider vinegar, & baking soda.
4. Let curdle for 2min.
5. Mix in all other ingredients.
6. Pour batter into donut molds.
7. Bake for 23min.
8. Let sit in pan for 5min.
9. Remove from pan & let cool for 20-30min.
10. Dip in icing glaze.

*For icing*
1. Place all ingredients in a mixing bowl.
2. Using a hand mixer, whip ingredients for 5min.
3. Refrigerate for 5min.
4. Dip in donuts. Enjoy!

Our #weeklyrecipe comes from @rainbowplantlife with this dreamy Caramelized Banana Porridge! Vegan and gluten-free morning goodness to fuel your day 💛

Here’s what you’ll need:
1/2 cup gluten-free rolled oats
1 cup plant-based milk + extra for topping
1 large banana, divided
2 Medjool dates
1 tsp vegan butter
1-2 tbsp peanut butter
1 tbsp hemp seeds
2 tbsp dairy-free chocolate chips
1-2 tbsp roasted hazelnuts
1 tbsp unsweetened shredded coconut
.
Here’s what you’ll do:
1. Slice banana in half. Mash half of it with a fork. Slice the other half into coins (not too thin).
2. In a medium saucepan, add the oats, 1 cup milk, 1/2 mashed banana, & Medjool dates. Cook for 5min, stirring frequently until thick and creamy.
3. Meanwhile, heat a small skillet over medium-high heat and add the vegan butter. Once hot and melted, add the banana coins. Cook for 3-4min, then flip and cook 1-2 more minutes until browned & caramelized.
4. Top cooked porridge with caramelized bananas, peanut butter, hemp seeds, chocolate chips, hazelnuts, coconut, and if desired additional milk. Enjoy!

Today’s #weeklyrecipe comes from @thefullhelping..nourishing Creamy Tomato Coconut Red Lentils for these cool SF nights ❤️🍅🥥

Here’s what you’ll need:
1 tbsp neutral vegetable oil (avocado, grapeseed)
1 white or yellow onion, chopped
2 cloves garlic, minced
1 tbsp fresh, peeled and minced ginger
1 tsp ground cumin
1 tsp ground turmeric
1/2 tsp ground coriander
1/2 tsp ground cinnamon
1 cup red lentils
1 cup peeled & cubed sweet potato or winter squash (about 1 small potato)
1-1/2 cups diced tomatoes & their juices
2-1/2 cups water
3/4 tsp salt
1 small bunch kale (or another leafy green of choice), washed & chopped
1 cup full fat coconut milk
Freshly ground black pepper, to taste
Lime juice, to taste
{Optional for serving: naan, cooked rice or quinoa, chopped cilantro}
.
Here’s what you’ll do:
1. Heat the oil in a medium sized pot over medium heat. Add the onion. Cook for 5-7min, stirring occasionally, until onion is clear and soft. Add the garlic & ginger and cook for another 2min, stirring constantly. Add the cumin, turmeric, coriander, & cinnamon; stir the spices with the garlic & onion for a minute, until everything is very fragrant.
2. Add the red lentils, sweet potato/winter squash, tomatoes, water, and salt to the pot. Bring the mixture to a boil, then reduce the heat to low. Cover & simmer for 15min. Uncover the pot, give everything a stir, then add the kale. Once the kale is mixed in, re-cover the pot & cook for another 5min.
3. Stir in the coconut milk.
4. Taste the mixture and adjust salt as needed. Add black pepper to taste, as well as some lime juice if desired. Serve with a cooked whole grain, naan, vegetables, or all of them together!
