dinner date tonight at Salata!! Salata has been a go to of mine for two years now. It's a giant build your own salad bar with plenty of vegan options. I get kale & Salata mix, edemame, corn, peas, radish, bean sprouts, alfalfa sprouts, cilantro, oranges, tofu, walnuts, and their Asian ginger dressing. So bomb!! 🌿🌿

guys these muffins are so good!! They taste even better than regular muffins. I am obsessed!! I got these at Whole Foods and my favorite flavor are the chocolate chip one!!

lunch at viva vegeria! This authentic Mexican restaurant is 100% vegan and gluten free. Pictured is our favorite bbq cauliflower tacos, the original vegan nachos, chicken flautas, and soft chicken tacos. Each plate comes with Mexican rice, a side salad, and borracho beans. Great authentic atmosphere and wonderful service, definitely a must for Mexican food lovers.

this spinach and artichoke dip was such a hit at our Super Bowl party. It's super creamy and cheesy and I swear you would have no idea that it's vegan! I paired it with organic salt free tortilla chips. I always choose salt free to reduce unnecessary amounts of sodium in my diet, and organic because most corn is grown with GMO's. I got this recipe from @sixvegansisters

MORNING GREENS 🌿 I usually don't like the taste of green smoothies but this one is amazing. It's one banana, a handful of spinach, a tbsp of almond butter, chia seeds, and soy milk.

cheesy hash brown casserole!! Guys this tastes so good!! I can't find where I got this recipe but I have a modified recipe below:

Ingredients
2 Ibs of frozen hashbrowns (thawed), 1 cup of Earth Balance Butter, 1 container of plain vegan yogurt, 1 batch of soup alternative (see recipe below), 1/2 yellow onion diced, 1 and 3/4 cup of daiya cheddar cheese shreds, plus more to put on top, salt and pepper to taste, 2 tbsp of nutritional yeast, green onions for the top
alternative soup:
2 tbsp of Earth balance butter, 3 tbsp of flour, 1/2 cup of vegetarian "chicken" broth, soymilk, salt and pepper
Process:
Melt butter in a saucepan, whisk in flour and cook for 2 min, then stir in broth and milk, leave on medium heat and stir until it thickens, add a few shakes of salt and pepper
Process for Casserole: -Pre-heat oven to 350 degrees -grease 13x9 pan
- in large bowl combine thawed hashbrowns and melted butter, mix - add in yogurt, soup alternative, onion, cheese, salt, pepper, and nutritional yeast and mix
- transfer to pan
- top with more cheese
- bake 50 min, then top with green onions

okay so I picked these up at Whole Foods yesterday and they are amazing!!! They taste so much better than the regular Swedish fish. Even when I wasn't vegan I would steer clear of gelatin products. Gelatin is a mixture of peptides a proteins produced by boiling the skin, bones, and connective tissues of animals. I personally think this is gross, and although jello and gummy candies taste great there are other alternatives to eating gelatin products, allot of gummy candies such as sour patch kids are made with high fructose corn syrup and are gelatin free. I definitely recommend simply checking the labels and knowing about what you're eating.

gooey vegan mac 🧀 For the pasta I use Banza pasta, which is made of chickpeas and full of protein. I used @decadent.vegan 's cheese recipe. Super yummy! This cheese would go super well with broccoli or on top of nachos as well!!

vegan tacos for dinner, for a quick and easy option I use soyritas ground taco meat on low carb organic tortillas with pico and guac. so yummy!

I finally feel back to 100% after having the flu, so I'm back to being on a workout routine. Here are some cute resistance bands I got on Amazon. I love that they come in a little bag so they don't get lost in my gym bag. Resistance bands are super beneficial when it's come to building glutes (ya booty lol)

For lunch I usually have to grab something really fast, so my go to place is jimmy johns. I get the number six veggie sandwich on whole grain (their whole grain bread is amazing!!). I make sure to tell them that I want no mayo or cheese and I add onions. I also get a large pickle on the side instead of chips (bc carbs)

yay for vegan ice cream. This super cute vegan ice cream parlor has so many different choices of icecream made from coconut milk and almond milk. Here is their unicorn poop on top of the mint chocolate chip. 💓💓
