Organic Roasted sweet potato: halved, tossed in avo oil, seasoned with sea salt, baked at 400 for 20 min
Roasted beets: chopped, tossed in avo oil, seasoned with turmeric, chili powder, and sea salt, baked at 425 for 25-30 min
Organic Hard boiled egg
Organic free range Curried chicken thighs, seasoned with sea salt and curry powder, fried in my @lodgecastiron
Crimini mushrooms: sliced, seasoned with cumin and sea salt and sautéed in cast iron after chicken
Dressing: organic balsamic vinegar, avocado oil, organic stone ground mustard, organic raw honey.
It sounds like a lot, but if you have a prep day, and make lots of everything, it's quick to whip up!
It's so good, it doesn't even need the dressing! 😋
