Jessica over @pastrypastmidnight brought up the topic of release marks on her tablets. I meant to post about this topic so it’s perfect timing. The larger the piece, the slower the release...get it? When chocolate gets cool, it retracts from the mould (or whatever it’s attached to such as transfer sheet). I do not recommend placing them in the cooler. I know not everyone has a Koma Chocolate cabinet but find a very cool room for cooling your finished product even if it’s small bon bons. Not only will you avoid exposing them to humidity, a slower release means a shinier product. And large pieces such as tablets require a very slow release. If you’re using clear moulds, just lift them up above your head to make sure they are released and pop them out when ready. I’m just getting started. This is nothing. I’ve only shown you 10% of what we will offer. But after two years of planning, we can put chocolate in our boxes. It’s been a lot of work but the reality is this: I did my hard work over 28 year. Son #1 and son #2 divided their responsibilities up and both put in tremendous work on this. The boxes, bags, marketing, name, store design, legal responsibilities were daunting tasks. They hired a firm from Brussels to assist with the branding and website. Everything was carefully pondered. They even 3D printed plastic pieces to stand in for chocolates when the boxes were created. They put this together in two years while holding their jobs and in one case, managing a household of little boys (thank you Andrea🙏🏼). So I hear a lot of, “Wow! That came together quickly” and “I loved watching you put it all together.” What you don’t see is the many trips to the storage space under the 10 Freeway, the clandestine meetings in a Beverly Hills Boardroom and running around with a Realtor. I know I’ve shown a lot of colorful moulded bon bons, but andSons Chocolatiers is about evolution and tradition. Most of our handmade chocolates are dipped in either dark chocolate or milk chocolate. This naked pistachio praline is making its way in our first boxes and it’s taking a ride through both curtains of chocolate! The texture and taste is incredible; full of toasted California pistachios and creamy praline. I am frequently asked what exactly is praline. There are two correct answers (if you’re wondering about that thing southerners call, “praw-leen, you’ll have to ask @cheftariqhanna). In France, praline is the liquified paste of hazelnuts, almonds or both. It’s an ingredient to be used in confectionary, ice cream making or pastry. It’s classified by percentage of fruit content versus sugar(the fruit being the nut itself). In Switzerland and Belgium (and I believe Austria and Germany), any bon bon filled with ganache or nut praline paste is called a “praline.” It’s a generic term. In French chocolate shops, moulded or enrobed ganaches are bon bons and any enrobed piece made with praline paste and set with chocolate and coca butter is called a praline. Now that these nations are united as the EU, we need a Geneva Convention written to avoid all of this confusion. #fbf to the set of the The Next Food Network Star in Manhattan Beach. Truth of this episode is that the producers had me judge the contestants desserts. What I didn’t know until I showed up, is that the desserts were all made of meat (meatloaf/mashed potato cupcakes etc). I have not eaten meat in 26 years (maybe longer). Well, I’ve teased this enough and the day is finally here. I can now tell you all the details and it’s a great story. Two years ago, I was approached by two gentlemen that asked if I wanted to collaborate with them on a project in Beverly Hills. Turns out that their mother had opened a chocolate shop in 1983 and made a huge success of it. She opened it coming out of a terrible recession and kept it open during two other recessions. These two gentlemen grew up in this business and when she retired, they continued to run it day to day. But they saw the changing trends of social media and innovation of new products on the market and that’s where I come in. We decided to do this together. We searched for more than a year to find a kitchen. We took trips together to see marketing agencies and tasted many other brands. We all put a lot of thought and consideration to their existing clients and our new ones. It’s a big deal for me. We are building a new store and a new brand. This what your cavities will look like if you’ve properly tempered the colored cocoa butter. They will have a matte appearance and if tempered properly, they’ll be ready to fill the cavities with chocolate in just a few minutes. I’m often asked if you have to temper the cocoa butter and the answer is yes. Just like you have to use tempered chocolate. I’ve had people tell me they don’t temper but I can only assume they are getting lucky because the compressor blows cold air through the paint gun. Of course, they aren’t showing their poor results and I’ve not witnessed this in person. Science tells the truth to all mystery and we are evolved enough to know that chocolate and cocoa butter have to be tempered to use them in this application and others such as setting a Praline Rocher. Note how clean my mould is despite using a 2 HP compressor to spray my moulds. It’s important to turn them over and wipe them after spraying to remove the excess. This is especially important if you are closing your chocolates with white chocolate. You could smear the excess color across your bottom.
