Green Breakfast Parfaits (serves 2)
Chia Pudding Ingredients:
-1/2 cup (60g) chia seeds
-2 cups (480mL) plant milk
-2 tsp. matcha powder or greens powder for color
-2 tbsp. maple syrup
Whisk together all ingredients in a jar until evenly incorporated. Set in fridge for 3+ hours, stirring after the first hour. for the middle layer, mix in additional milk/yogurt to reach a lighter color.
-3/4 cup (64g) rolled oats
Cook oats and 1.5 cups (360mL) water in a medium pot for 7-8 minutes, until thick, then sweeten to taste and chill in the fridge for 1 hour. *For a no-cook version, combine oats, sweetener, and 1 cup (240mL) plant milk; set for 2+ hrs in the fridge. Once ready, layer everything to your liking and enjoy!
