Keto Meatballs
⠀⠀⠀⠀⠀⠀⠀⠀⠀
▪️450 g (1 lb) ground beef
▪️50 g (1 large) egg
▪️20 g heavy whipping cream
▪️50 g water
▪️20-30 g onions, minced
▪️1-2 Tbsp parsley, chopped
▪️50 g parmesan cheese, grated
▪️2 g (1/2 tsp) salt
▪️1 g (1/4) tsp pepper
▪️pinch (1/8 tsp) garlic powder
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions: Preheat oven to 350F/175C. Line a baking sheet with aluminum foil, and generously drizzle with olive oil. Mix all ingredients in a large bowl. Divide mixture into 15-20 equal sized meatballs (use a cookie scoop), and drop them on the baking sheet. Shape into meatballs ensuring you pick up some of the olive oil from the baking sheet. Bake for 30 min. Serve with oven roasted broccoli or marinara sauce.

Oven steak and broccoli. Leftover pesto from @thecounterburger . Steak was cooked at 350F until internal temp of 135-140F. Had some leftover “fresh” rosemary (was sitting in my fridge), and a few pats of @kerrygoldusa garlic & herb butter.

Last night’s dinner. @questnutrition Protein Chips Tortilla Style gave it a nice crunchy texture. I was using up stuff in the fridge. I don’t know how old that avocado was, but it was tasty! 😅 And yes, there is romain lettuce under there somewhere 🤣

Just a reminder that not everything comes out as planned. These are failed bread tests. I caught my hubs trying to grab one of these for breakfast, and I had to tell him that these were left out to dry and to be pulverized for breadcrumbs. 😭 He was sad, so I made the keto bread test 5 the following day. Luckily, that one was a success! So do not be discouraged if your first or second or third or so forth attempt doesn’t come out as expected. Breadmaking is hard, but you learn so much from trying. Don’t give up, and happy baking!! 👩🏻‍🔬👩🏻‍🍳🍞🙌

@shrewdfoodco sent me a sampler pack of their Protein Crisps. They remind me of those cheese balls I used to have in the office break room, but without all the grease and guilt. They have a really, really, really loud crunch so if you like crunch you might like this 😋

▪️99 g water, 100 F / 37 C
▪️0.5 g (1/8 tsp) instant yeast
▪️48 g keto flour (see bio)
▪️52 g vital wheat gluten
⠀⠀⠀⠀⠀⠀⠀⠀⠀
15.1% Water Roux:
▪️50 g water
▪️10 g keto flour (see bio)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Final Dough:
▪️45 g water, 100 F / 37 C
▪️4 g (1 tsp) instant yeast
▪️33 g (1 large, lightly beaten) egg, room temp; reserve extra for egg wash
▪️sponge (above)
▪️water roux (above)
▪️101 g keto flour (see bio)
▪️121 g vital wheat gluten
▪️11 g heavy cream powder
▪️40 g sweetener
▪️4 g (1 tsp) salt
▪️40 g butter, room temp

Directions:
Sponge: Dissolve yeast in water, and let sit 5-10 min. Stir in remaining ingredients. Cover and let ferment for 2 hr in a turned OFF oven with the oven light switched on.

Water Roux: Heat ingredients on med-low until pudding texture. Set aside to cool slightly.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Final Dough: In a bread machine or stand mixer or bowl, dissolve yeast in water, and let sit for 5-10 min. Add the remaining ingredients EXECPT the butter, and knead until a smooth ball forms. Knead in the butter until you can stretch the dough without it tearing (window pane test). Cover and let rise for 2 hrs or until double in size. Divide into portions, shape into balls, cover and let rest for 10-15 min. Roll into a rectangle the width of your pan, then roll into cinnamon roll from the short side. Flatten and repeat. Place in baking pan, cover, and do a final rise for 2-3 hrs or until double in size. Brush tops with leftover egg. Place in fridge to chill for at least 15 min. Preheat oven to 300 F / 150 C. Place bread in, and immediately turn oven down to 265 F / 130 C. Bake for 60 min, or until internal temp is at least 190 F / 88 C. Crack open oven, and leave it in for 5-10 min. Remove from oven. Immediately brush melted butter or heavy cream on the crusts. Let absorb for 5-10 min, then transfer bread to wire rack. Cool at least 20 min before tearing apart, or cool completely before slicing. Store in ziploc bag.
